I think there are a million pasta bake recipes out there, I counted! I think I’ve had them all! They are one of the heartiest dishes around, easy to make with cheap ingredients and always tasty!
This one is no exception! The key for me is the vegan béchamel sauce.
How do you make a pasta bake? Very often you boil the pasta according to the instructions on the packet, then you throw it in a baking dish, add the sauce and bake!
As a vegan, not that long ago, trying to find a cheese alternative was virtually impossible.
Thankfully now this is not the case. This dish goes one step further with a, ‘cheezy béchamel sauce’ which is easy to make and tastes fantastic! This dish is ready in less than forty-five minutes from start to finish and serves four.
Spinach & Artichoke Pasta Bake
This is incredibly creamy, I can just see myself during the winter opening the oven door eager to eat the source of the wonderful aroma slowly filling my home!
This recipe is divided into three sections, the sauce, the topping and the pasta. You don’t make the pasta from scratch; the pasta section is a wonderful mixture of spinach onion and artichokes! You mix this with an amazing sauce that is so creamy with a hint of lemon, garlic and chili.
If you don’t like spicy food, adjust the chili powder according to your taste. Once this is mixed, add the topping which is a mixture of breadcrumbs and other goodies and in the oven it goes. Less than thirty minutes later you have a dish from heaven!

Here’s what could be described as more of a classic type of pasta bake.
The recipe does have some healthy additions of mixed vegetables that conveniently come from the freezer, so if you’re looking for the type of dish where you throw everything together as soon as you get home from work, then put in the oven while you get ready for the evening, this is it.

The time listed to make this dish is one hour and fifteen minutes, but I can tell you that I made this in less than an hour and I didn’t skip anything. It’s much easier to make than you may think.

There is a mistake in this recipe in that they list ‘Parmigiano-Reggiano’ which is not vegan. To make it vegan Parmesan cheese, simply place pine nuts and nutritional yeast flakes in a food processor and pulse until your desired consistency is reached, that’s it!
This dish comes together in thirty minutes or less and has a wonderful mixture of flavors. Very healthy and perfect for any time of year. Adapt it and make it your own as well!
Garlicky Cruciferous Pasta
What a lovely looking dish, doesn’t the purple cabbage add an amazing color contrast? This light lunch can be ready in thirty minutes or less.
You can easily swap the vegetables with whatever you have that need eating although as it is, ‘out of the box’ this really is a delicious recipe.
In the additional optional garnishes, the author states that you can add pecorino cheese, this is not vegan so just substitute for your favorite plant-based cheese and you’re all set!
Garlic Pasta with Roasted Cajun Cauliflower
This is surprisingly easy to make. You just have a Cajun spice and then toss the cauliflower with it. There’s also a creamy garlic sauce which is to die for.

Despite the forty-five-minute total time to bring this to the table, this is not a complicated recipe. If you buy gluten-free pasta, then the whole dish is free from wheat as well as being nut free. Absolutely delicious!
Instant Pot Pasta Puttanesca
If I tell you that this dish is oil free you may be surprised. What if I tell you that you don’t even need to boil any water? Read on!
Please note this dish uses a kitchen tool called Instant Pot which is a pressure cooker.
You put everything in with a splash of water and the cooker does the rest. I haven’t got a pressure cooker, but I can tell you with a little imagination and creativity, you can make this dish in a saucepan or in the oven. That’s what we did, and it was very tasty.
Pasta Alla Norma
You can have this delicious meal on the table in thirty minutes or less and that includes the prep and cooking time, both are about equal in how long they take.

Sometimes I find avocados don’t have much flavor and almost watery. If you can relate to that, just try and get the best quality you can. The ingredients also list a, ‘good’ olive oil, make sure it is extra-virgin.
