Easy Vegan Breakfast Recipes
Easy Mexican Breakfast Burritos
Here’s the thing, everybody loves burritos, but they can sometimes be complicated to make. You have a bunch of different ingredients and sometimes to be really authentic, some of them may be difficult to source.
This recipe provides wholesome ingredients without missing out on flavor. The secret ingredient for me are the potatoes, they may be a straight-forward ingredient, but they make these burritos incredibly satisfying.
You can even wrap these burritos in foil and store them in the fridge and then just reheat when you need them. Fantastic.
The Easiest Berry Chia Jam
Making jam is something we rarely do for a number of reasons, the process is long and can be laborious and perhaps more importantly, there’s an awful lot of sugar involved. Here we have a recipe that is none of those things!
With just five ingredients including maple syrup, which is optional, you have everything to make the healthiest jam ever.
Using the natural properties of chia seeds and some frozen fruits and orange juice, you’re looking at a 10 minute prep time and then you need about three hours in the refrigerator, and that’s it! This jam stores in the fridge for about a week. No preservatives, no refined sugar, just nature’s goodness.
Easy Homemade Cashew “Yogurt”
I don’t think I’ve ever made yogurt. Years ago I remember seeing a home yogurt making kit but it was just weird, you had to put all these weird ingredients in and let them ‘culture’ or something. I know it took hours to make and reading the instructions did the opposite of making you hungry.
This amazing yogurt is dairy-free and will be ready in no time. You’ll need some cashew nuts which have been soaked overnight.
Occasionally you see people advising that you can boil the cashews or just soak them for three or four hours, ignore this and trust me, you need to soak them overnight to get really good results.
This is especially true when making something like yogurt when you want a smooth and creamy texture. Not only is this healthy, it tastes incredible.
Easy Coconut Milk Oatmeal with Fruits
Want a quick and healthy breakfast that will keep you going all morning without reaching for snacks? You’ve come to the right place.
This recipe uses quinoa, rolled oats and coconut to create a lovely porridge type of breakfast.
Before making this, I urge you to buy a selection of your favorite fruits to layer over the top. It makes all the difference and the presentation is awesome.
Easy Breakfast Burrito
Breakfast burritos sometimes get a bad rap. Some people say they are unhealthy, but the problem is you can’t label every dish the same way.
I think burritos for breakfast (or branch) are fantastic, you can even prepare them the night before.
You know all the ingredients used and this recipe has some fantastic ingredients bursting with flavor. This may be an easy dish to make, but it doesn’t cut any corners believe me.
Amazing ingredients with a base of extra firm tofu, mixed nuts, beets and a whole bunch of herbs and spices.
I think the only challenge is to make sure you fold the tortilla properly! One note of caution, in the ingredients the author has listed ‘Worcestershire sauce’; the traditional or ‘normal’ recipe for this source is not vegan. There certainly are vegan alternatives so look for those.
Incredible burritos that will keep you going for the rest of the day, I love them!
Easy Naturally Sweetened Oat Granola
Granola, it’s a wonderful thing! You know, I don’t think I’ve ever seen a store-bought packet that contains bad ingredients.
The real problem with pre-packaged granola, at least in my experience, is the price. It can be just ridiculously expensive.
Then I start to wonder how long ago it was made, was it days, weeks or months? I don’t mean to be doing a disservice to granola, I guess I’m just saying unless you make something yourself, you never know. So, how difficult is it to make your own?
If you don’t have all the ingredients already in your kitchen, I imagine you have most of them.
Make this yourself in the oven and it stores in a tight container at room temperature for up to 2 months. It tastes amazing and is incredibly economical, and so much cheaper than anything I have ever seen in a store.
Easy Peach Almond Granola
Sometimes you can get crunchy granola and other times there are recipes like this, where it includes fragrant fruits and spices.
This can be ready in 30 minutes or less and that includes prep and cooking time. This recipe has dried peaches though you could use any dried fruit.
Stores perfectly in a sealed jar and although the author doesn’t specify how long this will keep, in my experience it is about 1 to 2 months if the container is airtight.
Wonderful with dairy-free milk or vegan yogurt.
Make yourself your very own oatmeal where the ingredients are not only easy to source but will save you a fortune compared to anything store-bought.
Straightforward ingredients, not too many and versatile enough for you to mix and match depending on your preference.
From start to finish, this is ready in 15 minutes and that includes prep and cooking time. Wonderful different textures from the softness of the oats to the crunchiness of the walnuts.
I love the hint of cinnamon in every mouthful, the recipe says it’s optional, I say it’s not!
Super Easy Toasted Coconut Granola
This is one of the best recipes for granola I have ever seen. It literally has a handful of ingredients and instructions are very well laid out and simple.
The author tells us this coconut granola stores in an airtight container for up to 3 weeks which is fantastic.
Serve with your favorite vegan yogurt or plant-based milk. This is definitely a winner.
Super Easy and Healthy Banana Oatmeal
Sometimes, especially in those winter months, you just can’t beat a porridge type of breakfast.
It’s nutritious, warming and keep you going for the rest of the morning.
Here we have four ingredients and that will make you the breakfast of champions! Top with sliced banana or other fruit, although even on its own, it’s perfect!
Easy and Creamy Green Smoothie
I never used to be into green smoothies, the first one I ever had I positively hated, it was like drinking a salad and just felt wrong! I so wish I had a recipe like this to start with.
The green comes from spinach, cucumber and celery. The rest of this smoothie is all about fruit including banana, mango and more! Throw in some hemp seeds and you’re good to go.
This is nothing but sweet and nothing but good for you.
Easy Vegan Chocolate Recipes
Easy 5-Minute Peppermint Chocolate Fudge
As you probably know, Fudge traditionally is not vegan, like at all! Getting a good dairy-free recipe isn’t as easy as it sounds.
In my experience, I have found recipes that taste great, but the instructions go on forever, or you get a simple recipe that doesn’t win in the flavor department. Then I came across this!
How long does this take to make? 5 minutes and you’re done, honestly, that’s it.
You just need some good quality dark chocolate and 4 other ingredients, one of them is a pinch of salt, and you’re good to go. Cut into cubes and enjoy!
Easy Chocolate Peanut Butter Fudge
There’s only one thing better than chocolate fudge and that’s chocolate fudge with peanut butter!
I couldn’t believe that this recipe just has four ingredients, its dairy-free and does not contain any refined sugar.
Talk about an easy recipe, this takes just 15 minutes from start to finish and it literally melts in your mouth.
Store in the refrigerator though I guarantee it won’t be there for long!
Easy Mint Chocolate Mousse
Full disclosure, the main part of this recipe is avocado! If you’ve never had a chocolate mousse before made with this, don’t be afraid.
I say this because I was a little apprehensive when I first had an avocado as part of a desert. I needn’t have been. It’s delicious, healthy and quick to make.
Most of all, nobody will even guess that it’s made from avocado, let alone dairy-free.
With just five ingredients you can make this in 10 minutes from start to finish. It’s a lot of fun to make and most importantly, incredibly easy.
The secret ingredient for me is the dates, I love their sweetness. I recommend buying medjool dates, they are absolutely the best.
You can make these desserts and store in the fridge until ready to eat. Perfect.
Easy Chocolate Cake
Chocolate cake is awesome! I have seen hundreds of vegan recipes to make this classic and they’ve all been ‘okay’. Nothing outstanding, until now.
This recipe is divided into two sections, the cake and the mousse frosting.
You’re only looking at 30 minutes prep time and the same for baking, that’s pretty good going for a proper home-made cake. The end result is a beautifully light and flavorful gem.
Fluffy Mocha Pancakes with Easy Chocolate Sauce
I think the only thing better than pancakes is chocolate pancakes! Warm up your griddle and get ready to be amazed.
You’ll have most of ingredients already in your kitchen, everything is straightforward and easy to source.
Mix it all up and get cooking. Serve with vegan chocolate chips, maple syrup or your favorite fresh fruit. Why not all of them?
Easy Vegan Curry Recipes
Easy Potato Curry
If you’re new to eating curry, and want to start making it yourself, this is a great starter recipe. It’s very simple but don’t think it’s lacking in anything. It’s super flavorful and pleasing to the palate.
You’ll use some curry powder, turmeric, and garam masala which are essential to the perfect curry. You can find these at most supermarkets. If you can’t find garam masala by itself, you can look for a curry seasoning blend to fit the bill.
Serve this potato curry up with rice, quinoa, or naan bread and you’ll be a fan of curry for life!
Easy Thai Green Curry
There’s a significant difference between Indian and Thai curry and if you’ve never had the latter you’re really missing out. One isn’t better than the other, I seriously adore both.
Thai green curry is certainly a famous dish, this recipe is gluten-free as well as being vegan.
Just take a look at the ingredients to see how straight-forward this is to make. You have everything from onion, bell pepper and more.
I love tofu, but I know some people aren’t into it, if you’re one of them simply substitute for your favorite vegetable or meat alternative product.
A delicious curry that tastes first class.
Easy Thai Green Curry Noodles
There are so many things to like about this dish! Not only is it bursting with flavor, but it’s made with very affordable and straightforward ingredients that you will have no problems sourcing.
The main reason this dish got selected for this roundup is because you could make it from scratch, yet it takes only 20 minutes from start to finish and this includes prep and cooking time.
The way the vegetables are cooked make them absorb the main flavors of coconut, ginger and garlic.
If you love those three flavors, this recipe will become your favorite!
Easy Green Curry Noodles
I really love noodle dishes that are in a broth. Personally, I find getting a decent recipe quite difficult as the best dishes are not always easy to make and the ones that are quick can sometimes taste bland. This recipe has everything.
Just a handful of ingredients make this quick dish. The prep time is just chopping up garlic, shallots and a few other things and for cooking, you’re looking at just over 10 minutes.
The noodles listed in the ingredients is the wide, ribbon-type pasta (made from rice), do feel free to use your favorite as it won’t change the recipe whatsoever.
Easy Vegan Curry Butter Chicken
The author describes this recipe almost as what you make when you have some coconut cream and spices and whatever else lying around in the kitchen, I’d say this is a great description.
I know many people that like ‘butter chicken’ when it comes to Indian food, but what happens when you’re a vegan, what’s the equivalent?
When we first shortlisted this recipe for the roundup, we thought it wouldn’t make it because we anticipated it would be somewhat complicated which is the opposite of what we were looking for.
Turned out we were incredibly wrong. The recipes divided into two, the main ingredients and the spices.
If you cook at home at least sometimes, you’re going to have most of these ingredients already. This really is one of those recipes where you can probably make from an averagely stocked pantry.
The end result is a beautifully smooth dish with gentle aromas where spices all blend together.
If you like Indian cuisine, you’re going to love this. Serve with basmati rice or your favorite Indian bread.
Easy Instant Pot Green Coconut Curry
If you’re trying to restrict the amount of oil in your diet but your yearning for a curry, check this out!
Some simple vegetables, both fresh and frozen, a little curry paste and coconut with literally a couple of other essentials and you’re good to go.
This is completely versatile so feel free to use whatever vegetables you have so perfect for using up leftovers.
You don’t miss the oil and it’s bursting with flavor. Serve over your favorite rice or perfect as it is.
Easy Indian Basic Curry Paste
When you want to make a quick curry and you have little time is the best way to describe this recipe.
I try to have a generic curry powder or paste on standby at all times. Trying to find a good quality one from the store, however, can be challenging.
This recipe is all about making your own. You need about a dozen ingredients, most of which are herbs and spices, to make this extraordinary curry paste.
Use as a base to then add further flavors for speciality curries or even use it on its own. It’s wholesome and you can certainly taste the quality.
If you’ve never made anything like this before and are a little apprehensive, the recipe page is loaded with photos and extremely well thought out; it takes you through each step and you can see how everything is supposed to look along the way. Stores in the refrigerator for up to 2 weeks. Delicious!
Easy Vegan Dessert Recipes
Easy Cheesecake Pudding with Blackberry Compote
When you want the creamiest dessert ever, you need to come to this recipe. Straightforward compote with incredible flavors and the beautiful richness.
The recipes divided into two sections, the pudding and the compote. The main part of the pudding is based on cashews that have been soaked overnight.
Regardless of what the recipe says, soak them overnight rather than doing shortcuts using the boiling method or high-speed blenders, there really is no substitute.
The prep time is only 5 minutes and then about 25 for cooking. Do check-out the recipe notes as it gives great tips concerning the use of fresh versus frozen fruit.
A fancy looking and tasting recipe that was so easy to make, it could almost be classed as cheating!
Easy Lemon Pie
When it comes to me and pies, it’s all about the crust, I love it and the filling or topping I always perceive as flavoring that accompanies the base.
With this recipe I adore both the crust and the lemon cream. I think anything that is lemon flavoured is always delicious and this was certainly no exception.
You need a can of coconut that has been refrigerated overnight for the cream.
The amounts listed in the ingredients make for 4 servings although the recipe page has a handy tool you can change for the servings you need, and it will automatically change the amounts listed in the ingredients. Fantastic on all accounts!
Easy Rocky Road Ice Cream
Vegan chocolate ice cream! Need I say more? Keep this recipe handy because you’re going to need it one day.
The ingredients list a pint of non-dairy vanilla ice cream as the main part of this dish.
This is certainly the quickest route although if this is difficult to source for you, put some frozen bananas into a food processor and whiz for about five minutes with vanilla.
If you’ve never frozen bananas before, you just need them ripe and preferably spotted, peel and slice into about 1 inch chunks and freeze in an airtight container.
That’s all you need. Other than that, there are just four ingredients for this recipe which will yield an amazing ice cream with wonderful textures because of the marshmallows and roughly chopped almonds.
Easy Kiwi Pops
When it comes to easy recipes, I think the only thing that beats this is eating an apple!
You’ll need some popsicle sticks, your favorite fruit, dark melted chocolate and add-ons of your choice.
This is totally adaptable and versatile so use your favorite fruit. Get the kids involved in the process as they will love it and it’s a good way to get them into it fruit.
Super Easy and Healthy Baked Fruit Dessert
Not all deserts are healthy and if we are brutally honest, they are hardly known for being the champions of health when it comes to that part of a meal. As always, we got you covered.
This baked fruit dessert is gluten-free and will satisfy your sweet-tooth craving while at the same time keeping it healthy.
I love how this dish is completely versatile, so you can use your favorite fruits and even throw in some granola?
The recipe notes provide some ideas for fruit combinations if you want to try something different next time. Perfect.
Easy Coconut Mounds
Have you ever had those chocolate bars filled with coconut? Totally tropical!
Easily make your own with just 5 ingredients (that’s right, 5!) Grab yourself some full fat coconut cream and the other ingredients and get to work.
As you’re making these from scratch, obviously expect a little prep time, you’re looking at about 30 minutes.
Then just cook for five minutes and you’re ready to rock. The first bite reveals this smooth and creamy coconut filling which is just to die for.
There’s a tool on the recipe page where you can change the amount of servings/bars you need. They’ll go quick so make lots!
Easy 3-Ingredient Banana Pancakes
Pancakes and fruit are one of my favorite breakfasts; fresh and so satisfying it keeps me going for the rest of the morning easily.
Here you’re looking at just five ingredients and yes, you’re making the pancakes from scratch!
Add your favorite fruit, coconut shreds or whatever you fancy! Absolutely delicious.
Easy 4-Ingredient Vanilla Chia Seed Pudding
Finding a healthy dessert is one thing, finding one that is healthy and very quick to make it certainly another. This one takes minutes.
Chia seeds have some natural properties which make for perfect puddings.
This recipe has just 4 ingredients and literally takes 5 minutes to make.
It’s extremely versatile so you can present it however you like and using your favorite fruit. You can easily change the flavor too.
This one uses vanilla extract and a little agave nectar. The base of the pudding is coconut, so you can imagine how all the flavors naturally blend together in this creamy texture.
You can make them beforehand and they store just fine in the refrigerator.
Easy Vegan Dinner Recipes
Easy Teriyaki Bowl
I really love teriyaki but what usually happens is that I buy a ready-made store-bought jar sauce to make the dish quickly.
These can be cheap, and they taste okay but when you check the ingredients you’re not motivated to buy one again any time soon!
With this recipe you’re making the sauce/glaze from scratch. It’s the first time I’ve ever seen such a recipe and I don’t know if they’re all like this, but simple and fast is the best description I can offer!
Please note, the ‘meat’ substitute in this recipe is a packet of something called ‘soy curls’ and it is a brand name I had not seen before.
If you’re unable to source this, either use your favorite meat substitute or simply use tofu. The teriyaki sauce is spot-on!
Easy Gravy and Mashed Potatoes
Sometimes you just want comfort food, nothing fancy nor complicated, you need something familiar that will satisfy that craving like nothing else. Mashed potatoes and gravy come to the rescue!
The recipe here as you’d expect is divided into two. The mashed potatoes are made with olive oil and unsweetened soy milk (or other plant-based alternatives).
Do make sure you use extra-virgin olive oil as there will a noticeable difference in the taste.
Don’t let the list of ingredients for the gravy scare you, you will quickly see that you probably have most of them in your kitchen already.
Straightforward and quick to make, you’re going to love this.
Easy Curried Tofu Scramble Recipe
Just because you see the word ‘scramble’ in the title of this recipe it doesn’t mean it’s for breakfast only.
This is so good they can be served for breakfast, lunch or dinner.
You may have already made a tofu scramble before, so you already know how easy these types of recipes are.
This goes a step further and makes the tofu curried. As you can imagine, this is extremely versatile, you can mix and match the veggies to suit your taste.
If you’re anything like my dad, you won’t be having the green bell pepper, this can easily be swapped for sliced zucchini. Easy and delicious.
Easy Dal Palak
We normally have these kinds of dishes from Indian restaurants, I’ve seen some ready-made fresh meals in the supermarket occasionally, but they’re never as good as the authentic recipes as you can imagine.
Right here we have just that, the ingredients are on point and what any professional Indian cook would use.
The instructions themselves are straightforward and in no time at all you can have yourself a Dal. Serve with your favorite rice or with naan bread, or both!
Easy Pad Thai (30 Minutes)
Who doesn’t love Pad Thai? There are many different recipes for this dish and we did our very best to find one that was bursting with flavor, healthy and easy, and we achieved our objective!
This recipe is divided into three sections, the noodles (you can also use your favorite), the vegan egg scramble made from tofu (you could actually leave this out if you wanted to) and finally the veggies and the sauce.
It’s filled with amazing flavors and textures, of course you can mix and match depending on your favorites or anything you have that needs eating, so it’s perfect for leftovers.
The end result will taste like the best take-out you’ve ever had except you know all of the ingredients and it’s super healthy.
Easy Chilli Mince Bean Wraps
What an amazing recipe, other than the tortillas, this is a fantastic vegan chili recipe so, if for any reason you’re not into serving this in wraps, simply adjust the amounts. Either way you win.
The ‘meat’ in this dish simply comes from a bag of frozen soya mince. Of course, you can use tofu or substitute for your favorite meat-free you usually buy and as a last resort, you could easily leave it out altogether.
Just take a look at the ingredients list and you’ll see some great herbs and spices, seasoning and even some (optional) wine, that’s for the recipe, not you, but I’m not judging!
Simply put, if you love chili, this recipe is for you.
This recipe is simply awesome on so many levels. If you like enchiladas you have to try this, if you’ve never had one before, even more reason to start now.
You’ll see ingredients are divided into three sections, the sauce, the cashew ‘sour cream’, and the filling.
All the ingredients are straight-forward, and you won’t have any problems sourcing anything.
If you’re new to cooking check out the ingredients page; not only do you have step-by-step instructions but there’s also a video that takes you through everything. Wonderful on every level!
Easy Pineapple Fried Rice
I don’t think I’ve ever come across a rice dish I haven’t liked. There’s nothing quite like a plate full of rice and all sorts of bits and pieces. It always tastes great and is wonderfully satisfying.
You’re making everything from scratch and there are just a handful of ingredients for this dish.
The amounts listed make four servings, but you can easily click or tap the number next to, ‘Servings’ on the recipe page and you can change it to whatever you need.
Of course, the best part of this dish is the pineapple, not just because of its flavor but it lightens everything up and brings all the other flavors together.
Easy Slow-Cooker Potato Ratatouille
As the recipe title suggests, ideally you have a slow cooker for this dish. If you don’t have one, just use a big saucepan with a little imagination and you’ll end up with the same results.
I really love the recipe page on this as it’s a little different. All the ingredients are listed first and then all the steps are very clearly laid out, and there are just three of them!
Now, I love ratatouille but, in my experience, I have found good recipes are hard to come by.
When this came across our desk I was eager to try and can confirm that it’s not a good recipe, it’s a great one!
Easy Brussels Sprouts Stew
Brussels sprouts, a vegetable that people either seem to love or hate. There’s no getting away from it, you have to at least like them to want to pursue this dish, however, as I am going to suggest in a moment, you can easily use another vegetable to achieve the same results. Either way you are in for a serious treat.
There are so many good things about this recipe it’s difficult to know where to start.
You have coconut, cashew nuts, onion, coriander and so much more. The secret ingredient for me is the garam masala, the author suggests you can substitute this with curry powder so use whatever you prefer.
The end result is a wonderful creamy dish that has a solid accompaniment to your favorite vegetable, the brussels sprout! This recipe so good that even if you don’t like brussels sprouts, just change it for something else and you’ll see what I mean.
Easy Vegan Lunch Recipes
Easy Asian Slaw with Ginger Dressing
If you’re looking for a crunchy salad bursting with flavor check out this recipe.
What I particularly love about this recipe is the ingredients are familiar, you really won’t have any problems sourcing anything, yet they are combined with an Asian twist.
The grated ginger and the sesame oil simply make this dish amazing and take it to a new level.
Of course, if you’re not a fan of ginger simply leave it out, there are lots of other flavors and the sauce/dressing will be just fine if you leave it out.
The salad itself has two main ingredients, green cabbage and red onion. Great texture, super healthy and a sauce you will use again and again.
Easy Black Bean Burgers
I know a lot of people that are vegan and yet won’t touch processed ‘fake meats’. Even though I don’t describe myself like this, I completely sympathise.
My main concern is, as vegan becomes more mainstream, corporations (that really don’t care about our health) will churn out endless products, highly processed with all sort of nasty ingredients.
Fast forward a decade or two and I can see the headlines already, ‘being a vegan doesn’t make you more healthy’, let’s not make the same old mistake, processed food is not good, whether vegan or not. We must all fill our diets with fresh and living foods.
Now I’ve got my sermon out of the way, let’s check out this recipe because it’s a burger made with real food.
The only processing is done with your own hands. I’ve seen a lot of bean burger recipes and my usual gripe is that they fall apart way to easily, either during cooking or even before.
I was eager to try this and can confirm these burgers do not fall apart. They are easy to make, and the prep time is just 10 minutes.
Most of the ingredients are herbs and spices, I imagine you’ll have most of them already. If you’re into burgers made with real food, try this out.
Okay, so I saw the title of this recipe and thought I was going to see a long list of ingredients that were going to be good but, you know, no matter how you spin it, there’s nothing quick and easy about making a home-made chili. How wrong was I!
On seeing the recipe photo I assumed that along with the beans there was some kind of processed meat-free mince.
There isn’t. The base of this dish is kidney beans, eggplant, bell peppers, celery and onion.
Add the other herbs and spices and in total you’re looking at a 5 minute prep time and then while it’s cooking (30 minutes), you can decide which movie you’re going to watch!
Serve with rice, quinoa or with your favorite crusty bread. Perfect!
Dumplings with Easy Gluten-Free Wonton Wrappers
You don’t have to say vegan dumplings twice to me, let me tell you! As this recipe uses white rice and tapioca flour to make the wrappers, it makes this dish gluten-free. It’s oil-free too by the way!
The ingredients are divided into three sections, the wrappers, the filling and the sauce.
Because you’re making everything from scratch you won’t be surprised at the 40 minute prep time, it’s worth it believe me! The filling consists of just three vegetables and as they are going in a dumpling your need to chop them finely (or use a shredder).
Feel free to substitute anything here if you prefer another vegetable. The end result is more than you’ll anticipate!
Easy Pizza Recipe
If you’re able to source dairy-free cheese, especially one that melts well, you’re going to love this pizza. It really is easy to make, and it tastes great.
Obviously, if something is easy, it doesn’t mean that it’s going to be quick as well. With this pizza you’re making everything from scratch and that includes the crust.
If you want to save yourself the hassle, check out your local store for some ready-made pizza bases that suit your dietary requirements.
Having said that, I really urge you to follow this recipe and make the crust yourself. Not only is it mentally satisfying, it will taste great. In addition, this is no ordinary ‘plain’ crust, this contains a little seasoning and even garlic powder, so it has a wonderful flavor on its own.
Add the toppings and your favorite vegan cheese and you’re good to go. Movie nights will never be the same again!
Easy Mashed Potatoes
Why is there recipe for mashed potatoes here? Well, firstly I don’t think we did enough and we should because it’s awesome.
Secondly, I hate seeing ‘instant mash’ packets at the store. That humble potato doesn’t need to be dried and then shredded into flakes before it stored in a packet for goodness knows how long! That’s just wrong.
My third point is that this recipe is the best mashed potato ever!
You’re looking at just five ingredients to bring together this creamy and fluffy mash.
The secret ingredient for me is garlic powder as it just adds a wonderful twist to this classic staple. If you’re not into garlic, substitute for onion powder without a problem. Fantastic!
Easy Coleslaw Sandwich Bars
I was so happy when I saw this recipe and it was all because of the coleslaw. I’ve tried so many vegan dishes for this and never came across one that was great, this one is.
There are no surprises with ingredients, everything is straight-forward and easy to source. A word of warning, or perhaps just something to make a note of.
This is labelled as a vegan recipe although the author has not listed the cream cheese as vegan so do make a note of this. Obviously, you’ll know but I wanted to highlight it.
I really love the bread slices and how they are made into ‘sandwich bars’.
You don’t have to follow this process if you just want the coleslaw but it’s a nice touch. Altogether a delicious recipe.
Easy Lentil Tacos
Nothing processed here, these are awesome tacos and the ‘meat’ is lentils and bulgur. It’s a taste explosion!
Please note that this recipe does include a couple of ‘Old El Paso’ products, one of them being the tacos shells and the other being seasoning mix.
You should be able to source these easily, however, if you run into any difficulties, look online. The end result is everything you want from tacos!
Easy Veggie and Bean Chili
This chili is not only vegan, it’s gluten-free as well! This is a seriously hearty dish and when I say that, I don’t mean that it will fill you up and make you lethargic.
Grab all the ingredients and make yourself this wonderful chili. It contains great stuff, herbs and spices, beans, lentils and so much more.
You really don’t feel like you’re lacking in anything and it’s incredibly satisfying.
I love the sliced avocado over the top just before serving. It really is perfect like this although if you want to go all out, serve over rice or quinoa. Best chili ever!
Easy Tamari Pickles
This is so much more than a regular recipe. Although it isn’t a ‘dish’ as such, it does teach you something really important, and that is an easy and fast way to pickle your favorite vegetables. This method will have your pickles last for up to 10 days in the refrigerator.
It isn’t pickling in the regular sense, but they taste great and its super fast and super easy!
You’ll need three ingredients plus your favorite vegetables all sliced up. The method has just three steps and you need to wait just 24-hour’s until your pickles are ready to eat.
There is no cooking and you don’t need to boil vinegar which makes your home smell for days on end, nothing like that. Just mix everything together, seal and you’re done. Superb.
Easy Vegan Pasta Recipes
Quick & Easy Pasta with “Meat” Sauce
Doesn’t the photo look just great! You know, there is no one-way to make an authentic Italian tomato-based pasta sauce.
Italy is divided into many regions and provinces, each with their own way of doing things.
Even within each province you only have to travel short distances to see a different twist on a classic recipe.
As you can imagine, this is first class comfort food and totally satisfying. Just six ingredients (one of them is the greens).
The meat-free mince mentioned is a particular brand name, if you’re unable to source it simply use the one you usually buy, or you can even use tofu.
This recipe is great if you have leftover pasta sauce and what’s even better, if you make a bunch and reheat the following day, it’s even more tasty.
Easy Drunken Noodles
If you like Asian inspired food, you absolutely need to check out this quick and easy recipe. You can have lime wedges for serving and once squeezed over the noodles it’s like the icing on the cake.
At first glance, it may look like there’s quite a few ingredients. However, if you cook at least a little bit I imagine you’ll have most of the things in your kitchen already.
As you can imagine, this is much healthier than any takeout. The noodles listed in the ingredients are rice noodles, give them a try if you’ve never had them before as I think they do go best with this dish.
If, for any reason, you have problems soucing them, just use your favorite noodles instead.
Easy Pesto Zoodles with Cherry Tomatoes
Do you have recipes you always fall back on that are your staples? The ones that you go to that are easy and made with just a few ingredients? Add this to that list!
The noodles are made from zucchini which have been spiralised or you can use a julienne peeler, the peeler is quicker and certainly less cleaning up to do.
Throw in some cherry (grape) tomatoes, a jar of your favorite pesto (make sure it’s vegan), a couple of other ingredients and you’re done.
The instructions suggest cooking everything, and while that is a good idea and will make everything taste great, if you’re getting into raw food you can leave everything in its natural state and have a blast!
The Best, Healthy and Easy Mac and Cheese
Yes, of course this is vegan! You may already know there are so many dairy-free mac and cheese recipes out there and in my experience, it’s difficult to find one that isn’t bland. This one is awesome!
You only have to look at the ingredients to see the quality of this dish. Sweet onion, russet potatoes, Dijon mustard and so much more.
The author claims she is a mac and cheese connoisseur and even kids love this one. I can tell you it’s certainly the best version I have ever tried and the creaminess is astonishing.
Keep this recipe, you’re going to need it!
Easy and Fast Spaghetti with Vegan Bacon and Peas
You can never have enough spaghetti recipes. Those noodles have to be one of the most versatile foods on the planet, right?
Do note that the ‘vegan bacon’ is a store-bought brand name mentioned in the ingredients.
If you can’t find one you could finely chop some eggplant as this is often used as a substitute as well. Other than that, you’re just looking at a handful of ingredients.
The whole thing comes together in 25 minutes or less and makes a super quick and tasty lunch that will leave you satisfied and ready to go for the rest of the afternoon. Delicious.
Easy Brussels Sprouts Penne
Brussels sprouts do tend to have a bad reputation and I think much of this is because of the lack of recipes for it.
People tend to eat it around the same time of year and then all they tend to do is just boil them. Hardly the most inspiring thing to do. Well, check this recipe out!
Minced garlic cloves, sliced mushrooms, fresh lemon juice and so much more in this straightforward quick and satisfying recipe.
You’re looking at bringing this to the table in 30 minutes or less.
The pasta listed in the ingredients is whole wheat penne, of course, you could use any type including spaghetti noodles.
If you’re not too keen on brussels sprouts, you could easily leave them out or swap for something like zucchini which would go great.
Either way, I promise you’re going to love this dish.
Easy Vegan Quick Recipes
Quick and Easy Raw Breakfast Pudding
Vegan breakfasts can be fantastic. Some people go for the meat alternative with meat-free bacon, vegan sausages and all that jazz.
You can also go for fresh fruit or any kind of cereal. What about a pudding? Healthy, tasty and satisfying. It must be so complicated to make right? Nope.
You will need some cashew milk which you can either buy from the store, or there’s a link in the list of ingredients on how to make your own.
If you have another type of dairy-free milk that is definitely your favorite, feel free to use it.
You will be making the pudding part the night before and then leave to chill in the refrigerator.
In the morning, grab your favorite fruit, layer in a fancy tall glass or simply mix everything in a bowl and you’ll have a beast of a breakfast!
Quick and Easy Barbecue Sauce
I think everybody loves barbecue sauce and most of us buy a store-bought version.
If you’re vegan this can be already a challenge and if you’re health-conscious too, you’ll know the ready-made sauces often have dubious ingredients.
I couldn’t believe how few ingredients there were for this sauce!
You will need a vegan Worcestershire sauce although the author does suggest leaving it out if you can’t find any, also if you can use a gluten-free tamari instead of the soy sauce then the whole recipe becomes gluten-free.
The amounts listed in the ingredients makes about 18 ounces (two and a half cups). This stores in the refrigerator for up to a week and however much you make, I guarantee it won’t be enough.
Quick and Easy Pasta Salad
I love pasta salads! In the summer when it’s hot, the last thing you need is to have the stove or the oven on unnecessarily.
Just cook the pasta once, make a bunch and you’ll have leftovers for the next day too, straight from the refrigerator.
This is one of those recipes that you need to burn in your memory! Use this as a base and then you’ll be able to adapt it depending on what you have in the kitchen.
You can leave some vegetables out and add others in. I love the white balsamic vinegar (you could use black). A wonderful recipe that is easy, tasty and healthy.
Easy Quick Pickled Onions
I think the only thing better than fried onions is pickled onions! Great for salads, burgers and just about everything and anything.
The problem with making pickles at home is that it can be a laborious process; boiling vinegar, sterilising jars, putting things in ovens, I think I’ve done all of it and I’m sure have the T-shirt somewhere!
When I came across this I couldn’t quite believe what I was reading in the recipe directions, it was telling me that the pickled onions would be ready in about 30 minutes. What? Not only that but they store in the fridge for about 2 to 3 weeks.
I had to try it. Sometimes with recipes that shortcut the traditional method of preserving vegetables, you can taste the difference. It’s not necessarily bad or lesser than, it’s literally just different.
With this recipe the onions taste like they have been traditionally pickled, it’s remarkable. With just six ingredients you can do everything.
Do note that one of ingredients are jalapeno peppers and if you don’t like them, you could leave them out although if you possibly can, they are great for added flavor. You have to make this!
Quick and Easy Chana Masala
I don’t think there’s any Indian dish I don’t like. Main dishes, sides, different types of rice and bread, I love it! If you’re into Indian food, you’ll know all about chana masala.
With this recipe you get all the ingredients and flavors from this classic dish, but it comes together incredibly quickly and ingredients I imagine you have in the kitchen already.
Get some curry powder, a tin of chickpeas (garbanzo beans) onion, baby spinach and just a couple of other bits and this all comes together in a frying pan with just 15 minutes of cooking.
Serve over your favorite rice to make this into a main meal.
Quick and Easy Pancakes
I know what you’re thinking, pancakes don’t take that long anyway, what could possibly be quick and easy about this recipe? Trust me, you do make the pancakes from scratch and I think it has to be the quickest recipe ever.
With just half a dozen ingredients, and that includes seasoning, you’re going to mix the batter for these light and fluffy pancakes.
If you never made anything like this before at home, this would be your perfect recipe.
Not just because of how easy it is, but also the recipe page is laid out, so you are taken step-by-step through everything and there are photos along the way.
Serve with maple syrup, your favorite fruit and maybe even coconut cream. Why not?
Quick and Easy Fragrant Coconut Soup
I like soups although I can’t say they are my go-to dishes. Everything always seems to take so long. You have to prep the vegetables, cook them and if that wasn’t enough, you then need to use a blender food processor.
I was intrigued when I came across this because I love coconut! I wanted to see how easy this recipe really was.
Well, the title is correct, it really is quick and easy. Perhaps more importantly, it looks incredibly appetizing and is bursting with flavor with every mouthful.
You can mix-and-match some of the vegetables depending on what you like. An incredible dish that looks as though it took hours to make.
Quick and Easy Roasted Red Pepper Mac N’ Cheese
This is mac and cheese with a difference. Normally the little pasta shapes are swallowed up by a creamy cheese sauce. As you can see from the photo, this one is a little different and I like that a lot.
From start to finish your looking at about 25 minutes or less. The ingredients could not be simpler, and I recommend getting pasta shapes that are little different to what you normally get for mac and cheese.
Along with the nutritional yeast, what really makes this recipe stand out for me is the onion and garlic powder, it makes everything perfect.
You may be tempted to skip the roasted peppers, but I urge you to try them as they are perfect with pasta. Comforting, satisfying and I’m sure will quickly become one of your favorites!
Easy Vegan Salad Recipes
Easy Garlic Slaw
What I like most about this slaw is the color. Of course, you don’t have to use purple cabbage and this is a positive aspect of this recipe, just use your favorite.
There are just 4 ingredients and the same number of steps in the instructions.
Ideally, you’re going to let the slaw sit overnight in the refrigerator so bear this in mind when preparing.
It’s very tasty and makes perfect additions to wraps, salads and burgers. Wonderful!
Easy Quinoa Salad
If you’ve never had quinoa before, you’re really missing out! It has a similar consistency to rice I guess although it contains protein and is very easy to digest.
The recipe here is divided in two, the dressing and the salad. There are many good things to say about the salad and all you need to do is check out the ingredients to see what I’m talking about.
In addition, it’s versatile so you can swap out any vegetables depending on what you have or prefer.
The dressing, however, this really steals the show! You have everything from balsamic vinegar, olive oil, minced garlic, seasoning… You simply have to try it.
Pistachio Dukkah and Easy Summer Wraps
You have some options for this recipe, you could go as it is or you use some soft tortilla wraps instead.
I say this because the first time I saw lettuce used as wraps I was sceptical until I tried them. If you’ve never had anything like this before, I promise you it works and it’s delicious.
There’s an added bonus here with the pistachio dukkah. Toasted pistachios with some incredible herbs and spices is something I have never eaten before.
The texture it adds to the wraps is wonderful, wait until you try all the flavors together! I recommend you go for this recipe and then, if needed, adapt it the next time.
I’m certain you’re going to love it.
Easy Thai Cabbage Salad
A gluten-free dish that looks as good as it tastes. If you love Thai cuisine, then you need to grab this 20 minute recipe!
You can either make your own coleslaw with shredded cabbage and carrot, or to save yourself some time and buy a prepared bag of coleslaw mix.
The recipe also calls for something called ‘bean thread noodles’, if you can source these go for it, if not you can either get some rice noodles or regular wheat noodles.
Prepare the dressing (it has peanut butter!) and make sure you have some fresh cilantro and chopped peanuts for the garnish.
Squeeze some fresh lime juice and you’ll be having this more than once a week. One of the easiest recipes I’ve seen and super healthy!
Easy Russian-Style Homemade Sauerkraut
If you eat cabbage a lot and so occasionally have leftovers, this is the perfect way to use it up. Sauerkraut is normally known for its German origins here we have a superb Russian-style recipe.
You just need 4 ingredients and 20 minutes. The instructions could not be simpler and there are photos along each step that guide you through everything.
The only sad part about this recipe is the waiting for the cabbage to ferment.
For the first four days you should tend to the cabbage with a wooden spoon once a day and then you’re good to go.
Keep covered and it keeps well in the fridge for up to 5 weeks (not a typo!) If you love pickles and fermented food, this is going to be at the top of your list.
Easy Mediterranean Chopped Salad
Doesn’t this just look delicious? Great for the summer or at any time of year. If you want to stay in season, just swap out some of the ingredients depending on availability.
Because of the chickpeas (garbanzo beans) and the couscous you’re going to get a satisfying salad to say the least!
The red wine vinaigrette is extremely easy to make and will go well on any salad. If you follow a gluten-free diet just swap the couscous with quinoa.
The dressing does contain brown mustard, so just check the ingredients for whatever jar you have to ensure it fits with your dietary requirements.
It tastes fresh and has an abundance of flavors and textures. Make it!
Easy Garden Veggie Quinoa Salad
There’s one thing in life for certain and that is you can never have enough recipes for quinoa salad.
I think I’ve eaten most of them although I must say, this one is definitely one of the best and it’s all down to its simplicity.
The dressing is listed as a single ingredient although it’s a link to a separate recipe on how to make it.
It does deserve to be listed separately because it’s that good, look out for the URL to ‘Vegan Creamy Italian Salad Dressing’.
The amounts listed in the ingredients yield 6 sides or 4 main dishes. Feel free to use your favorite salad ingredients depending on your preference and availability.
You can eat this with the quinoa after it’s just been cooked or let it cool, totally up to you. Either way you’re in for a treat!
Easy Vegan Sauce & Spread Recipes
Easy Lemon Tahini Sauce
Why do you need tahini sauce? There are many reasons; it makes for a great dip, salad dressing, and it’s also the perfect base if you want to make other dressings as well.
Personally, I use this kind of recipe as my go-to salad dressing much of the time. It’s creamy and satisfying.
Check out the ingredients and experiment until you get the flavor you’re looking for. For example, the author has added a few extra optional ideas such as spices, herbs and garlic.
I think it’s perfect as it is although sometimes you may just fancy a change and that’s when it’s time to try adding in a couple of other things.
Keeps well in the fridge for up to 3 days in a sealed container, shake well before use. Delicious!
You just need a blender and five minutes to make this beauty. I’ve been trying to find a great vegan mayonnaise recipe for some time.
The store-bought versions are good although I find they can be quite expensive.
This tastes incredible and is really thick yet creamy. The base of this is silken tofu and the author suggests that any will do.
Then add a handful of other ingredients, blend all together until smooth and you’re done. If you don’t have a blender you could certainly use a food processor drizzling in the oil while it’s whizzing.
Stores well and the refrigerator for up to a week. Make those sandwiches come alive with this great plant-based mayonnaise!
Easy Cashew Ricotta
One thing often missing from vegan dishes is a plant-based ricotta. It’s quite difficult to make so people tend to just leave it out and I’m one of them.
When I came across this, everything changed.
The base of this vegan ricotta is cashews that have been soaked overnight. Other than that, you’re looking at just five ingredients if you include the optional basil.
Use this as you would ricotta or if you’re not sure what to do, use as a dip or spread it on crackers. It’s totally delicious.
Easy 3-Ingredient Nutella
Yes, we’re talking a vegan nutella! You need just three ingredients, an oven and food processor to make this beauty.
Look, I don’t know what to tell you, you just need to make this and now. Stop messing about trying to decide which recipe is the best one, you can do that later.
Now is the time to make chocolate spread with no nasty ingredients and one that is good for you.
What is it you’re waiting for? The only thing you need to decide on is the number of different ways you can eat it: spread on a cracker, in a sandwich or simply straight-up on a spoon!

You need just three ingredients, frozen cranberries, a sweetener and water. Follow the instructions (there are just two steps) and in no time you’ll have the best cranberry jam ever.
Bursting with flavor and perfect.
Easy Apple Butter
This is called apple butter although I guess you could also describe it as apple sauce. Either way it’s delicious and you need to make it!
A great thing about this recipe is that it does not contain processed sugar.
Perfect for using up apples around the fall although even if you don’t live anywhere near apple trees, you can still get some great bargains at your local grocery store, especially if it’s an independent outlet. Just a handful of ingredients is all you need.
If you’re a little apprehensive about making something like this as it may be your first time, the recipe page contains a video that is 68 seconds long and takes you through everything step-by-step. I told you it was easy!
Easy Blueberry Chia Jam
This jam is awesome as it uses the natural properties of chia seeds that saves you a lot of time.
Just 4 ingredients and about 10 minutes cooking time is all you need to create this fruity explosion of a spread! Perfect for toast, porridge or just about with anything!
Easy Cheese Sauce Recipe
Creating a vegan cheese sauce will make you wanted by your vegan friends and family!
They’ll be inviting you over all the time. I haven’t come across many recipes for just a plant-based cheese sauce so seeing this was a real treat, especially when I realized it took 3 minutes to make from start to finish and no, that wasn’t a typo!
This will be perfect as a dip, with burgers, poured over steamed vegetables, on pizza and even to use with mac and cheese. It’s seriously awesome!

Looking at the ingredients I think you’re going to have most of them in your kitchen already.
It’s standard stuff but put together in a fantastic recipe.
The instructions are extremely straightforward, just 4 steps. One of the best.
Easy Vegan Snack & Treat Recipes
Easy Three Seed Crackers
When I normally see recipes like this I’m a little divided. The reason is because most of the time you need a dehydrator and I don’t think many of us have one. To make these crackers, you don’t!
Get your seeds, spices and blend everything together to make your paste. Once you add the water you need to let everything soak for a minimum of 4 hours or overnight.
The next day, slow bake in the oven and keep checking your crackers as you’ll want to take them out before they get too dry. Really great stuff!
Easy Protein Bars
Protein bars are things we normally buy from the store. The ingredients are usually okay although we don’t really know when they were made and occasionally they did contain a few things we can do without, but we buy them because of the convenience. And anyway, how the heck do you make a protein bar?
Yes, these are healthy, and they taste amazing. The best thing about this recipe is that you can make your own flavors so get thinking.
The most important thing about this is the cost, it can to save you a whole heap of money as it’s infinitely cheaper than buying the store-bought bars.
To top it off, there are no wrappers to throw away! Try it, it’s easy and good for you!

The cookies are absolutely full of flavor and melt in your mouth. The ingredients listed make for 18 large cookies or 24 small ones. Make the large ones!
Easy Edamame Dip
If you like edamame, you must make this dip! To say this is delicious would be an understatement.
A lot of thought has gone into this recipe, the author has obviously sought out some great ingredients and planned how all the flavors are going to blend together.
I can tell you, it’s a winner. Get your raw vegetables ready!
If you don’t want to be that healthy right now with raw vegetables, use nachos!
Easy Caper Tomato Bruschetta
Bruschetta is a classic dish you normally come across in an Italian restaurant. I don’t think I’ve ever known anybody make it at home.
That’s a big shame because there is no cooking time, you just need a blender and some wonderful fresh ingredients.
The author uses a can of unsalted diced tomatoes as a base for this bruschetta. This works incredibly well and if you have one in the kitchen already, use it.
If you want to be all fresh, then I recommend getting some grape (cherry) or plum tomatoes, you want the firm variety.
Whatever you choose, lightly toast some of your favorite bread and enjoy!
Easy Tofu Teriyaki Skewers
Some people don’t like tofu, others are frustrated with it. If you know what you’re doing, even for carnivores, you can make tofu can go from zero to hero!
There are two secrets in this recipe, the ingredients for the marinade and the way the tofu is cooked.
Top with sesame seeds and you’re good to go.
If you have skewers do use them otherwise it’s just fine without and you can serve these with a side of stir-fried vegetables and rice.
Easy Kale Chips
My goodness kale chips! I seriously love them although there is one thing that I really dislike about kale chips, and that’s how expensive the store-bought packet ones are.
What makes it worse, you split open the bag, look inside and it looks virtually empty.
Not only is this recipe extremely simple (just three ingredients that includes a bunch of kale), you just need your regular oven.
Make as much as you can and be sure not to invite anybody, that way you can have them all to yourself!
Easy Paleo Bounty Bars Aka Mounds
Bounty bars, those wonderful treats of chocolate covered coconut. Whoever thought you could make it yourself at home?
The ingredients are divided into 2, the chocolate coating and the filling.
As you’re making everything by hand, you won’t be surprised that there is a little prep time of 1 hour 45 minutes.
Don’t be put off! They are better than you can ever imagine.
The amounts listed will make eight bars although you can change the servings, and this will automatically change the amounts in the ingredients. Fantastic!
Easy Spicy Roasted Cashews
Flavored roasted nuts, I think, we always buy from the store, right? The trouble is, the bags are either too small or too big, and they’re not cheap either.
Make your own with this fantastic gluten-free recipe.

Store in an airtight container for up to 2 weeks, heaven or what?

I love how you can simply alter the recipe according to your preference. If you like it as it is, perfect.
If you’re not into garlic, just leave it out. And if you want to pickle some other vegetables, simply use the same method.
You’re looking at a 15 minute prep time and then just 5 minutes for cooking.
They are delicious, and the jalapenos will keep in the refrigerator for several weeks.
Easy Vegan Soup Recipes
If you know about Vietnamese Pho, you’ll know the importance of getting it just right.
Sometimes, recipes for this can be a little complicated or time-consuming, here it’s neither.
You’re looking at bringing this to the table in 50 minutes or less and that includes prep and cooking time.
The ingredients are divided into two sections: the ingredients for the main dish and then the topping. Both are as important as each other.
Incredibly authentic as though it has been delivered from the best Vietnamese restaurant, except at a fraction of the cost.
Easy 30-Minute Mushroom Vegetable Soup
I know some people love mushrooms and others don’t. It usually seems to be a love them or hate them situation, I don’t think we can get away from the fact that you need to at least like mushrooms before you attempt this dish. If you are fan, you must try this.
An incredibly comforting dish, I can just imagine being under the weather and feeling sorry for myself with this making me feel better.
Don’t wait until your ill though! You can bring this to the table in about half-an-hour and this includes prep and cooking time.

When I first saw this, I wanted to make it just because of the name, Tom Yum!
Please note that the amounts listed in the ingredients make 4 to 6 bowls so adjust as necessary.
This is a Thai inspired dish and I don’t think you’ll have any problems getting all the ingredients.
I say that because there may be one or two things that you’ll need to check first. There are some topping options and I recommend the rice noodles and the cilantro.
Make sure all your ingredients are as fresh as possible. Add the cilantro just before serving and enjoy. Tasty, aromatic and healthy.
Easy French Lentils Soup in Pressure Cooker
If you have a pressure cooker and are looking for recipes so you can use it more often, check this out. The great thing about this is the author gives you instructions to make it without the need for any special device too.
French lentil soup is a classic dish that is simple to make and is very healthy.
The soup itself is incredibly satisfying and people that aren’t normally into soups like this a lot. Good, old school ingredients to make this timeless classic.
Serve on its own or with your favorite French bread.
Easy Butternut Squash Soup with Crunchy Roasted Chickpeas
Wow I’ve never seen anything like this before, a fantastic soup with roasted chickpeas!
As you may expect, the recipe is divided into two sections; the soup and all the ingredients on how to make the flavourful roasted chickpeas (garbanzo beans).
For the latter, you are looking at chili powder and sriracha hot sauce so adjust according to your preference.
If you’re looking to impress someone with something they have never had before, go for this.
The soup is outstanding and if that wasn’t enough, the chickpeas make it even better!
Instant Pot Easy Detoxing Black Bean Soup
This is one of those great soups that is even better the next day as everything marinades together. The title of the recipe suggests it’s good if you’re on some kind of a detox, but it’s good for anytime!
This is certainly an easy recipe and ideally, you’re going to have a pressure cooker as the instructions are geared towards that.
If you don’t have one, just use a little imagination and your cooking experience and you’ll generate the same results.
I would recommend you read all the directions before starting. Don’t get me wrong, there are just two steps and a couple of notes so nothing complicated but I think it’s important you see the big picture before starting out.
The ingredients are straight-forward, and you won’t have any problems sourcing anything. Looks great and tastes great.

You have curry, coconut and a pinch of nutmeg.
Please note that the ingredients do include red chili pepper flakes so add this (or leave out) according to your preference. Comforting and satisfying.
Easy Thai Carrot Soup
Thai cuisine has some of the best soups I have ever tasted. Normally carrot soup is for carrot lovers, I mean, there’s not much to it other than carrots! This recipe has a lot to it and I don’t mean that it’s complicated, you can bring this to the table in about 40 minutes.
The coconut is what makes everything simply perfect as it blends all the ingredients together.
The ingredients list fresh lime juice and label it as optional, I would recommend that you add this for sure.
You’ll need a blender to make this smooth although you could achieve very similar results with a food processor. Wonderful.
It was a lot of fun putting together this collection.
