Thankfully now this is not the case. This dish goes one step further with a, ‘cheezy béchamel sauce’ which is easy to make and tastes fantastic! This dish is ready in less than forty-five minutes from start to finish and serves four.
Spinach & Artichoke Pasta Bake
This is incredibly creamy, I can just see myself during the winter opening the oven door eager to eat the source of the wonderful aroma slowly filling my home!
This recipe is divided into three sections, the sauce, the topping and the pasta. You don’t make the pasta from scratch; the pasta section is a wonderful mixture of spinach onion and artichokes! You mix this with an amazing sauce that is so creamy with a hint of lemon, garlic and chili.
If you don’t like spicy food, adjust the chili powder according to your taste. Once this is mixed, add the topping which is a mixture of breadcrumbs and other goodies and in the oven it goes. Less than thirty minutes later you have a dish from heaven!

What a lovely looking dish, doesn’t the purple cabbage add an amazing color contrast? This light lunch can be ready in thirty minutes or less.
You can easily swap the vegetables with whatever you have that need eating although as it is, ‘out of the box’ this really is a delicious recipe.
In the additional optional garnishes, the author states that you can add pecorino cheese, this is not vegan so just substitute for your favorite plant-based cheese and you’re all set!

If I tell you that this dish is oil free you may be surprised. What if I tell you that you don’t even need to boil any water? Read on!
Please note this dish uses a kitchen tool called Instant Pot which is a pressure cooker.
You put everything in with a splash of water and the cooker does the rest. I haven’t got a pressure cooker, but I can tell you with a little imagination and creativity, you can make this dish in a saucepan or in the oven. That’s what we did, and it was very tasty.

The trick for me is to make sure that the avocados are not just right but really good quality.
