Vegan Asian Soup Recipes
Thai Red Curry Noodle Soup
Hands up everyone that thinks noodle soups are the best thing since… noodles! Incredibly versatile and always a satisfying meal.
Thai curries are just my favorite and having that flavor here with noodles in a soup makes me want to stop writing and make it now. This dish we’re making tonight, so I can verify that the ingredients are very easy to source. Get the best quality you can and don’t forget the toppings, totally delicious!
Canh Khổ Qua Chay (Stuffed Bitter Melon Soup)
The original version of this dish is not so vegan friendly but this one certainly is! It uses seitan as the ‘mock pork’ which is stuffed inside a bitter melon.
If you like green onion, then this soup is for you! There are some fantastic flavors whirling around this recipe.
With prep and cooking time, you’re looking at about 45 minutes to bring this to the table. If you’re looking to impress someone with something totally authentic, this is it!
Vegan Chicken Noodle Soup
Everybody seems to say that you need chicken soup when you get ill. I never had it when I was sick, but I get a little light comfort food hits the spot wheny you’re not feeling too flossy.
This is a vegan version made with whatever ‘vegan chicken strips’ you can find. Nowadays there are some great choices around and if you have trouble sourcing anything, you can always fall back on tofu.
Throw in your seasoning, noodles, some delicious vegetables and you have yourself a great meal. If you’re unfortunate enough to be sick, this will get you feeling nice and crispy before you know it!
Thai Curried Butternut Squash Soup
If you like the taste of curry and you love thick warming soups, this is for you. Absolutely perfect for those cold winter evenings.
Please note that the amounts listed in the recipe yields about 4 to 6 servings so bear that in mind. The ingredients are good natural foods and while you may expect a delicious recipe (which you will certainly get!), if you go for the optional garnish of pomegranate it will make the dish even better!
Thai Coconut Lime Soup
This is one of those dishes that tastes like the real deal, like it was bought from a high-quality Thai take-out restaurant!
You’re going to need 30 minutes or less to bring this to the table.
As well as being healthy, it is absolutely bursting with flavour and I’m not just saying that! You will seriously be surprised. This makes five servings and is gluten-free.
If you want to make a flavorful but light starter, this is it. If you want an amazing entrée, have twice as much and I promise you will make it again and again.
Tom Yum Soup (Gluten-Free)
This is a Thai dish that either makes for a light starter or the perfect main event. You can pretty much have any combination of vegetables for this recipe so it’s perfect for using up leftovers.
Regardless of what you choose, its distinctive flavor will remain throughout.
The ingredients are easy to source though you may have to find an Asian supermarket for the Tom Yum paste.
It’s quite popular so perhaps worth checking at your local supermarket too. You get optional tofu or coconut milk for this, so make it as you prefer. Absolutely worth it!
OMG! Wontons are like so complicated and difficult to make, you better only get them from a take-out, right? Not at all, check out this recipe where you make them from scratch!
You’ll need some wonton wrappers that you can either buy or there’s a link in the recipe to make those too.
Other than that, get your vegetable broth on, gather all your fresh ingredients and let’s get cooking! This takes less than 30 minutes from start to finish, and nobody can argue with that!
Laksa – Malaysian Curry Laksa Soup Recipe
This is one tasty dish. You get to make Laksa paste from scratch and along with fresh turmeric root, taste a little corner of Malaysia.
This recipe is divided into two sections, the Laksa paste and the soup. Altogether you’re looking at about 45 minutes to bring this to the table.
There isn’t anything difficult to find here, you’ll easily get all you need. This is a real treasure so treat yourself or show off to that special someone, either way, you win!
Pho Soup Recipe (Gluten Free)
This recipe is a twist on a classic Vietnamese soup. Not only vegan but gluten-free as well and above all, simple to prepare in just 30 minutes.
The ingredients are straightforward, so you won’t have any trouble sourcing anything.
I love that you make the broth yourself with some amazing ingredients from shiitake mushrooms to garlic and ginger. The recipe calls for rice noodles although, of course, you can use your favorite.
Vegan Bean Soup Recipes
White Bean & Portobello Stew
When is a soup not a soup, when it’s a stew! When you want something hearty, warming and totally moreish, grab this recipe.
Have a look down the list of ingredients, you’ve got everything from herbs and spices to wonderful beans.
If you use dried beans remember that you need to soak them overnight and follow the instructions on their packaging.
If I were you, I would follow the recipe that suggests simply using the canned variety. Great flavors from white miso to Portobello mushroom. Serve with your favorite crusty French bread!
Smoky Tofu & Bean Soup
There’s nothing quite like a tasty broth filled with lots of hearty goodies! Right here we have a soup made with fantastic herbs and spices.
In the soup we have some extra firm tofu that has been baked to perfection, carrots, onion, beans and so much more.
You’ll need about 50 minutes to bring this to the table although most of this is cooking time in the oven, so you’ll have plenty of time to decide which movie you’re going to watch while you’re eating!
Smokey Black Bean and Sweet Potato Soup
Given the quality of the soup you end up with, I’m sure you’ll be surprised as I was that this takes only 25 minutes to make from start to finish.
Ridiculously easy to make and if you look at the recipe list, you’ll see salt and pepper listed on different lines as well as some other spices.
This means that with just a small handful of ingredients you can make yourself a satisfying soup bursting with flavour. Would make a perfect starter at a dinner party!
Slow Cooker Orca Bean Soup
At the beginning of this recipe the author asks if you have tried Orca beans before. I had never eaten them, so this was my first time. They are good!
Please note that this recipe does require a slow cooker although if you don’t have one I’m sure that you can still make this dish with a saucepan and a little experience.
Do make sure that the beans are soaked overnight according to their instructions. This is delicious and just what you need on a chilly Sunday evening in those winter months.
Creamy White Bean Soup with Kale, Rosemary & Lemon
These types of soups are my favorite, a creamy consistency and beans.
I must admit that I did wonder what it would be like with baked tofu chunks in there as well, or maybe even instead of the beans. I’ll have to try that next time.
It’s important that you get the best quality ingredients you can for this. There are many ingredients so it’s important to source the best you can for this recipe.
If you’re looking to impress someone, this is a high-quality dish. Honestly, it’s so tasty and flavorful that you won’t even need any bread and there are not many soups you can say that about.
Vegan Corn Soup Recipes
Cilantro and Sweet Corn Soup
I could eat sweetcorn by the truckload, it’s something I have never got tired of, I just love it! One of my favorite soups is like a corn and potato chowder so when I saw this I was excited!
You’ll need about 50 minutes or less to bring this to the table although most of that is cooking time.
This is a very thick and hearty dish. Makes for a great starter or have a big bowl, as I did, and knock yourself out. Incredibly flavorful and I guarantee that you will be making it again.
Chilled Cream of Basil Soup with Corn
You get two recipes in one here with a delicious cucumber salad which alone is a wonderful dish. The soup itself is very rustic with some simple ingredients, a sign of a fantastic dish.
You will need 2 cups of raw cashews soaked overnight before you attempt this so please take note. Other than that, you are literally looking at four or five other ingredients (one of them is optional).
Ideally you going to need a blender to make this, if you don’t have one a food processor will be just fine. Make this, you won’t be sorry!
Creamy Corn and Red Pepper Blender Soup
If you’ve been reading a lot of our recipe round-ups, you’ll know that I really like corn soup. This gluten, soy, nut, grain and even salt free recipe is a creamy soup that is easy to make with delicious and easy to source ingredients.
Please note, you will need a high-speed blender to make this. If you don’t have one, you could use a food processor, but I don’t think you will get quite the same results, but it will work for sure.
If you don’t have room for a blender in your kitchen, consider a hand blender which will do the job and takes up virtually no space! The ingredients are simple with some wonderful spices.
Corn and Potato Chowder
One of my favorite soups of all time just got even better! I owe Kaitlin the author a big favor for bringing this to me!
My regular corn and potato chowder recipe has potato smashed so small that you don’t really notice it.
This recipe leaves the potato chunks as they are, so you get to appreciate them too! I love the nutritional yeast and especially the garlic, neither of which I have ever tried in such a soup. Absolutely delicious!
Roasted Poblano & Corn Soup
If you like poblano chile peppers, take a look at this. As well as corn you have potatoes, garlic, onion and so much more.
This dish does include Garlicky Lemon Crema and it links to a recipe on how to make it.
We actually left the crema out because we didn’t have much time and I can tell you that the recipe still came out first class. Please note that the ingredients here make four servings so adjust as necessary.
Indo-Chinese Corn Soup (Instant Pot)
This delicious soup can be brought to the table in 30 minutes or less. The ingredients could not be easier to source, simple stuff that comes together beautifully.
I love the minced carrot which gives this a vibrant color. The secret ingredient for me is the ground cumin which adds a little touch of magic.
Vegan Creamy Soup Recipes
Curried Cauliflower Cream Soup
Cauliflower and curry seem to go together naturally. Here we have a curried cauliflower soup which brings those two flavors together as a perfect light starter or have a nice big bowl for a main meal.
The ingredients are very straightforward, you won’t have any problems sourcing anything. Please note that this yields 1 quart so adjust as necessary.
The sesame oil is not overpowering and gives that magic touch.
There is a cayenne pepper included in this recipe, so make sure you adjust the amount according to your taste.
Creamy Asparagus and Pea Soup with Coconut
I think asparagus is often overlooked, people think that you generally just boil it. Here it makes the basis of a delicious soup, along with green peas.
There’s just a handful of ingredients in this recipe and in total just takes 20 minutes to bring it to the table. The coconut cream is the finishing touch that brings all the flavors together with a wonderful creamy texture.
Caramelized Golden Beet Soup with Fall Roots
Before you ask, of course, this is vegan! The garlicky yoghurt is a separate recipe at the end, you have to scroll down past the ‘directions’.
Even without the yoghurt, this is an amazing soup and you simply won’t believe it’s vibrant colour until you see it with your own eyes.
Try to imagine, you have ingredients like sweet potato, golden beets, carrots amongst others and they all blend together to make this amazing looking soup.
Add the garlicky yoghurt to finish and you have a dish from heaven!
Creamy Heirloom Tomato and Avocado Gazpacho
For those of you that don’t know, gazpacho is a traditional Spanish cold soup. In other words, it’s raw! This makes it incredibly healthy and the natural flavors are bursting through in every mouthful.
If you’ve never had gazpacho, don’t be put off. It’s not like regular soup just gone cold! The ingredients are things like baby spinach leaves, tomatoes, garlic amongst others.
Then you have avocado that adds a natural creamy texture and blends everything beautifully.
If you don’t eat everything in one sitting, this stores in the fridge perfect for the next day!
Creamy Zanzibar Carrot-Tomato Soup
Take a look at that picture! This African inspired dish has to be one of the most beautiful recipes I have ever seen!
The prep time is literally just a few minutes and then you cook for about 25 minutes.
Don’t be put off if you think the list of ingredients is long, many of them are spices and because they are listed separately it appears is that you need a truckload of food, you really don’t.
Remember this is a quick recipe and an easy one at that. Not just for every day, but perfect if you want to impress somebody as well!
Vegan Garlic Soup Recipes
Rapini and Garlic Soup (Made with Two Heads of Garlic!)
If you like garlic, look no further! A very simple recipe that comes together in just 30 minutes from start to finish. Adding your favorite pasta and you’re good to go.
The ingredients listed are probably as easy as you could get. Be sure to adjust the hot pepper flakes according to your taste or leave out altogether. Very healthy and incredibly satisfying. Serve with your favorite bread.
Roasted Garlic Cauliflower Soup (Gluten-Free)
This soup has a wonderfully thick consistency and the cauliflower and garlic go incredibly well together. It’s incredibly easy to make and perfect for a dinner party when you want to impress.
The secret ingredient for me is the lemon. It may sound simple and ordinary, but it brings a certain freshness to every taste that is both unique and familiar at the same time. Absolutely wonderful!
Urad Dal Soup with Onions and Garlic (Gluten-Free)
Oh my goodness, this is like a little piece of heaven in a bowl. Wonderful ingredients with herbs and spices such as mustard seeds, turmeric and jalapeno.
I think it would be an idea to write the ingredients down before you go to the store as there are a couple things I have never heard of such as hing and asafetida.
If you have a local Asian store, if they don’t stock it I am sure they will be able to get it for you. Serve with naan or your favorite Indian bread. It’s incredible!
Garlic Soup + Rosemary Polenta Croutons
You’re looking at a seriously good recipe and if you need to impress someone, look no further. Be warned, this is garlic city so make sure everybody has some to avoid offence!
It may seem simple, and perhaps even trivial, but for me the potato is the king of this recipe. It brings everything together as well as providing the perfect consistency.
Do take a look because in addition to the garlic soup, you also get to make polenta croutons which are amazing not just for this soup, but great for salads too!
Roasted Garlic Asparagus Soup
Roasted vegetables are simply delicious, so imagine them as a basis for making a soup!
There is a little prep time here of about 30 minutes but it’s fun and when you’re ready, the cooking time is just 10 minutes.
I couldn’t believe there were so few ingredients for this recipe yet the flavor was jam-packed! For the cream you can use coconut milk or your favorite non-dairy alternative.
Let me give you a tip! Make some extra roasted garlic and then spread it on some crusty bread. A wonderful recipe.
Vegan Health & Detox Soup Recipes
Easy Avocado Detox Soup
This is essentially a raw soup and there’s nothing like food, as nature intended. The recipe is split in two: the soup itself which has just four ingredients, and then the topping.
The latter is a delicious cream with a base of cashews. The instructions suggest soaking the cashews for 10 minutes in hot water. If you have time and you remember, soak them overnight as I think you will get a better consistency.
You don’t have to use the topping although if you can, do so. The vibrant colours with the two shades of green is stunning.
Make this for yourself if you are on a health kick or make it as a starter if you are entertaining and have a dinner party. Your guests will love it!
Healthy Homestyle Stuffed Pepper Soup
A wonderful satisfying and hearty soup. It’s more like a stew really but who’s arguing?
You’re looking at about 30 minutes to bring this to the table which is incredible. There is virtually no prep other than chopping a few bits, the rest is throwing it all in your cooking pot.
The flavors are rich yet not overpowering. You can use any color or bell peppers, or even a mixture of different types.
We just used red as somehow that seemed to fit with the smoky flavor of the dish. Absolutely delicious and great for leftovers!
Turmeric Broth Detox Soup
What’s the difference between a broth soup and minestrone? The ingredients!
This wonderful dish has a Middle Eastern inspiration and to say it’s tasty is an understatement.
Chickpeas, lots of herbs, spices and noodles, what more could you want?
If you love turmeric, then this will become one of your favorite dishes ever! This is too good to be anything other than an entrée. Feast yourself!
Green Summer Soup with Dill
So you want something light, bursting with flavor and at the same time it must fit in with your health kick?
Here it is! Best of all it takes just 15 minutes to bring it to the table, and that includes cooking and prep time!
With a base of zucchini, green peas and arugula, you know that this is incredibly healthy.
There’s just a handful of ingredients and where it suggests you use 2 to 3 cups of water or vegetable broth, I would recommend the latter, but you’ll be good with water as well!
A truly wonderful dish.
Creamy Broccoli Soup (Secretly Healthy!)
Looking at the photo of the finished product, you’d never imagine that it was totally healthy and yet it is! This is hearty and satisfying plus you won’t feel all bloated afterwards.
Please note that the recipe includes raw cashews which ideally should be soaked overnight so bear this in mind.
The alternative is to boil them, I always prefer soaking because it seems silly to me to go to the trouble of sourcing raw cashews (normally they are not raw) and then boiling the living daylights out of them!
The ingredients list is split into two, the broccoli soup and the cashew cream. Even with both you are looking at a maximum time of 45 minutes from start to finish. Don’t forget the nutritional yeast for that cheesy flavor!
Chilled Artichoke Avocado Spring Pea Soup with Healthy Prebiotics
If you’re getting into raw food and looking for recipes, look no further than this creamy bowl of deliciousness! Perfect if you are on a health regime or if you just something a little different.
As it’s raw, you’re looking at just 10 minutes prep time, and that’s it! Do try and get the best quality ingredients you can as it makes all the difference.
The recipe suggests either almond or coconut milk, we used the latter and it was delicious to say the least. We will be making this again soon and I know you will too!
Immune Boosting Green Soup
If you don’t feel well and need something comforting, this is it. If you do feel well and want something delicious, this is still it!
The ingredients for this are extremely simple and you won’t have any problems sourcing anything.
There is a pinch of cayenne pepper so adjust according to your taste or leave out altogether. We have kale (or spinach), peas, ginger, garlic and so much more.
Best of all it will be ready in 25 minutes or less and that includes prep and cooking time. Who can argue with that?
Simple Detox Soup
I love soups like this because they are so healthy, easy to make and best of all, totally flexible.
What I mean is that the essence of this recipe will not change if you use different vegetables, which makes it perfect for anything that you have the needs eating.
With some herbs de Provence, ginger and onion powder, to name but a few, you’re in for a treat.
Yes, the recipe is called a detox soup but whether you are on a health kick or not, this is simply a sensible recipe to have. You could even throw in some rice or noodles if you like!
Detox Lentil and Beet Broth Soup
If you want something full of flavor and super healthy, this is it! Very simple ingredients such as lentils, garlic and beets and you know your taste buds will be happy!
With just a 10 minute prep time and 30 minutes to cook this is both easy to make and your body will thank you.
I love the intense and vibrant color! Even if you’re not on a health kick, this would make a wonderful starter for a meal if you are entertaining as its packed with flavor, yet very light.
Vegan Noodle Soup Recipes
Chickpea Noodle Soup
Chickpeas (garbanzo beans) and noodles in a soup. If you’re not excited by that alone, just pack your bags as it’s time to leave.
The only thing I don’t like about this recipe is that the bowl in the picture looks far too small, it needs to be at least 10 times as big!
I love how flexible this recipe is, it has mushrooms, carrots and celery but if you don’t have one or two of these, it’s okay to leave them out.
If you have other vegetables instead, such as zucchini or bell peppers, you can easily use them instead. The essence is just to use what you’ve got.
The chickpeas and the noodles are the stars of the show and will leave you feeling satisfied and trying to find an excuse to make this tomorrow as well, and the next day!
Bok Choy Miso Noodle Soup
Stop messing about and just make this recipe, I mean, what are you waiting for? With the portobello mushrooms, chickpea miso paste, tamari and so much more, you’re in for a treat.
Use your favorite Asian noodles or even just regular pasta.
The recipe does include an option of crispy tofu and if you can, I recommend you go for this too.
This is also a flexible recipe, so you can easily throw in any vegetables that you have. A wonderful dish.
Miso Soba Noodle Soup with Jalapeños, Shallots, Basil, and Tofu
One of the simplest recipes to make, with just a 5 minute prep time and just 15 minutes to cook, there’s little to argue about here.
If you are concerned that the tofu in the picture is deep-fried, worry not, it’s baked!
This recipe is also very flexible so if you don’t have any baby broccoli florets, you can easily substitute for literally anything you like! Don’t scrimp on the toppings, they are essential, as is this recipe.
Totally satisfying and will soon become one of your favorites!
Vegan Potato Soup Recipes
Potato Leek Soup
As the weather starts to get cooler you’ll be needing warming recipes such as this. Incredibly satisfying because of the delicious Yukon gold potatoes and packed with flavor because of the wonderful herbs and spices.
Don’t be put off by the 1 hour and 10 minutes needed to bring this to the table. This is one of those dishes that you create because you have some time and want to enjoy making it.
With so many pre-prepared meals nowadays and corporations that make them trying to convince us not to cook anything from scratch, we mustn’t forget that the process of creating a wonderful dish is not only rewarding but is at the very heart of healthy eating. The flavor of this recipe speaks for itself.
Make it, you’ll thank me later!
Sweet Potato Soup with Kale
Florian from Contentedness Cooking always makes wonderful dishes. Other than the seasoning, this recipe only has six ingredients and takes 25 minutes or less to bring to the table. Nobody can argue with that!
Sweet potatoes, full fat coconut milk and would you believe even chopped apples! No wonder this is so satisfying.
Get yourself some pine nuts and dry roast them on a pan for garnish and they will be the perfect icing on the perfect cake!
Coconut Curry Soup with Sweet Potato Noodles
You know you must make this dish, don’t you? I don’t think you have a choice, it looks amazing and wait until you taste it!
The noodles are made from spiralized sweet potato although you could easily use carrot or even zucchini.
If you want to be a teeny bit less healthy you can also use your favorite regular noodles too.
The point is, it’s up to you and that is just one of the wonderful things about this recipe. Ready in about 30 minutes, a wonderful treat for you, or if you’re looking to impress someone, look no further!
Fully Loaded Cheesy Baked Potato Soup
This is one of the tastiest soups I’ve had, and I don’t say that lightly. It’s got everything, cheesy flavor from nutritional yeast and a ‘bacon’ flavour from shitake mushrooms. As always, the best part is no animals have been harmed in our recipes.
The amounts listed in the ingredients make for 8 servings so adjust according to your needs.
You’re looking at 30 minutes prep time and the same for cooking to make this wonderful creation. It’s going to quickly become one of your favorites!
Vegan Quick Soup Recipes
15-Minute Miso Soup with Greens and Tofu
You can never have enough recipes that take just 15 minutes! This is tasty, super healthy and only has 2 grams of fat per serving!
Other than water and a nori sheet, which is optional, there are just four ingredients in this dish.
You really wouldn’t know it! This would be perfect if you’re feeling a bit low and under the weather. It’s so tasty, however, don’t wait until you’re sick, make it today!
10-Minute Gazpacho with Fresh Herbs
What’s better than a 15 minute recipe? Well, obviously it’s a dish that just takes 10 minutes! If you’re getting into raw food check this out.
Gazpacho is a traditional Spanish cold soup made from raw ingredients. This recipe uses a can of tomatoes so if you want to go all out raw, use fresh.
Other than that, put all the ingredients in a blender or food processor and pulse until you reach your desired consistency.
Due to the nature of this dish, try and get the best quality ingredients you can as it will make all the difference.
20-Minute Moroccan Chickpea Soup
You don’t have much time, but you want to eat home-made and healthy. Here you have fire roasted tomatoes, red pepper flakes, chickpeas (garbanzo beans) and so much more.
I know that so many of us have little time, but I find it sad that cooking real food has been a victim and now we rely on something made in a factory, when we should be making it ourselves.
This is what you have here, it’s real honest cooking with simple and rustic ingredients. Your body will thank you and so will your taste buds!
Vegan Spicy Soup Recipes
Spicy Summer Corn Soup
Don’t you just love corn? I love it and if you do too, you’re going to be in heaven when you taste this. Looking at the picture, would you believe this comes together in about 30 minutes?
That includes prep and cooking time! Not only is this vegan, it is also oil, sugar and soy free.
The ingredients are straight-forward, and you won’t have any problem sourcing everything. There are some optional toppings and I fully recommend that you get everything simply because this soup deserves it, and so do you!
Spicy Cream of Corn Soup
What a wonderful looking soup this is! It’s so tasty that you can serve it warm or chilled and there aren’t many dishes that you can say that about.
I thought this dish would have many ingredients but there’s just a handful. After you’ve roasted everything, you’ll need a blender to achieve that creamy consistency.
If you don’t have one, you could use a food processor although you may not achieve exactly the same results, but still good.
Best of all, you can make this ahead of time and store in the fridge or even freeze in an airtight container. Wonderfully flavorful!
Spiced Yellow Split Pea Soup + Crispy Shallots
A wonderful hearty soup bursting with flavor and for me, the crispy shallots are a win! Incredibly easy to make and the roasted sweet potato is the foundation for all the other flavors.
Please note that the second item on this recipe suggests using ghee or olive oil. If you don’t know, ghee is clarified butter and therefore not vegan so avoid this and certainly go for olive oil, preferably extra virgin.
This soup is incredibly healthy with the likes of turmeric and the freshly grated ginger. Absolutely to die for!
Spicy White Bean Pumpkin Soup (Gluten-Free)
This gluten-free recipe is the definition of moreish! It’s one of those soups that just has one color and doesn’t always look thrilling, but I can assure you it’s so much more than just a generic soup.
Do note that the recipe is split in two, the soup itself and the ‘magic sauce’. The latter may seem like an optional extra and strictly speaking, it is.
However, for me it’s an integral part of this dish and a must. The amounts listed in the ingredients make for eight servings so adjust as necessary.
Spicy Coconut Soup Recipe
This gluten-free spicy coconut soup is real comfort food. When I first saw the photo, I was wondering what else was in the soup floating around and I can tell you that it’s sugar snap peas and mushroom!
This is also one of those recipes that is wonderfully flexible so depending on your taste and availability, you can swap things around.
Would you believe that this Asian inspired dish takes just 20 minutes from start to finish? I was surprised, and I’ll admit a little sceptical, so I tried it myself.
I shouldn’t have doubted, and I am here to tell you that this is worth every moment it took to make, even if it took twice as long, it would still be worth it.
Spicy Goji Berry Soup
This is one of those recipes that will easily become a family favorite. It’s so easy to make and there’s literally just a handful of ingredients.
When I first looked down the list of items needed I thought, is that it? And I mean that in a way to say I can’t believe so little ingredients made this wonderful dish.
It’s warming, satisfying and comes together in 25 minutes or less. Use as a starter or, as I did, a big bowl as the main event. Good enough to eat on its own or serve with your favorite crusty bread.
Spicy Lemongrass Noodle Soup
Yes, this dish looks incredible and yes it’s easy to make. Not only is this a simple recipe but also quick coming together in just 30 minutes.
You absolutely must make the marinated tofu. Not only is it perfect for this dish, I suggest you keep this as a separate recipe as it’s great with salads as well.
What I love about this is you end up with the final dish looking exactly like the photo, and we can’t always say that. An absolute gem!
Vegan Vegetable Soup Recipes
Quinoa Vegetable Soup with Kale
If you’ve never tried quinoa, now is the time to start. It’s similar to rice but is a protein too, so you don’t end up feeling so full afterwards.
The recipe page is fantastic as it takes you through each step with photos, so you know what everything is supposed to look like at each stage of the process.
Please note that the amounts listed yield 4 to 6 servings, so adjust as necessary. Incredibly tasty and satisfying.
Cleansing Vegetable Turmeric Soup
If you are on a health kick but want something satisfying and flavourful, check this out. Turmeric is well known for its anti-inflammatory properties and this takes centre stage for this recipe.
From start to finish your looking at about 40 minutes to bring this gem to the table. Please note that included in this recipe is a pinch of cayenne pepper so adjust as necessary or leave out altogether.
Wonderful chunks of cauliflower, beans and kale, and I haven’t even mentioned the shirataki noodles! Sometimes people think that recipes labelled as healthy are a bit bland, this proves them all wrong!
Vegetable Wild Rice Soup
When I first saw this recipe, I wondered when I’d make it because I had wild rice just the night before.
As I had half a packet of rice left, I thought I’d make it that evening and boy was I glad I did!
Look at the photo and believe me when I tell you that you can achieve the same thing in every way.
Incredibly easy to make and amazing not just to the eyes, but the taste buds too. You’ll eat twice as much as you intend to!
Roasted Root Vegetable Soup
If you like root vegetables, then this recipe has your name all over it. We have parsnips, rudabegas, turnips, carrots and so much more.
The root vegetables are roasted in the oven with olive oil and seasoning and this gives this soup its very distinctive flavor.
Throw in some onion, garlic and thyme leaves, and you know you’re onto a good thing!
Fall Vegetable Quinoa Soup
What a lovely soup this is, lovely ingredients that will satisfy you for the rest of the day.
If you’ve never had quinoa before, you treat it and serve just like rice except it’s a protein too!
The flavors complement each other beautifully and if you’re anything like me, you’ll end up eating twice as much as you anticipated.
You’re looking at about 15 minutes in total to bring this to the table. Good honest food.
Velvety Green Vegetable Soup
Trust me, the name given to this recipe isn’t just some sort of marketing without any real basis, this really is a smooth as you can get. It’s filled with spring greens and totally delicious.

It has an extremely vibrant color which makes it even more appetising! Delicious!
Vegetable Tortellini Soup
My parents are both Italian so grew up with tortellini and to this day I have never got tired of them. They are so versatile and, in this recipe, are the perfect accompaniment to the rest of ingredients.
Traditionally, the tortellini filling is not vegan so do make sure that you find some that are plant-based.
This is a flexible recipe so if you don’t have any carrots or kale, you can easily swap them with something else and achieve the same results.
Beautifully satisfying and great for any time of year.
Reset Vegetable Soup
Why is this called a reset soup? Well, the author wanted to make something that was full of flavor and satisfaction and at the same time help get you back after you have perhaps spent some time indulging yourself. This really is that dish and it’s fantastic.
Please don’t be put off by the list of ingredients, it’s not that long and many of them are herbs and spices, so not as long as you might expect.
It’s not difficult to see this is an incredibly low-calorie meal yet at the same time, full of flavor and satisfaction.
If you can’t get chickpeas (garbanzo beans) use cannellini or something similar. Whether you’ve been indulging yourself or not, this is a wonderful recipe.
Mushroom Barley Soup
This is one of those soups that isn’t creamy but almost like a stew. Perfect for when you want something healthy and satisfying that will keep you going for the rest of the day.
Would you believe that everything comes together in just 20 minutes.
Most of the time is prepping and you only cook for five minutes! Really hearty and best of all as it comes together so quickly, you’ll make it in a snap.
West African Peanut Soup
This is a lovely thick West African inspired dish. It has a little spice, ginger, onion, collard greens and more. Perfect for when you want something different.
Something I occasionally do if I have some leftover soup is cook up some rice and have that with it.
This soup goes perfectly with your favorite rice! Included in the ingredients is peanut butter and you can choose whether you have crunchy or smooth.
Traditionally, this dish is quite spicy so if you like that kind of thing, go heavy on the hot sauce!
Lasagna soup? Is that even a thing? How does that work? Do you make a lasagne and then blend it?
I bet they are some of the questions you are asking yourself. Trust me on this, this is a great recipe and no, it is not a blended lasagna!
The soup part of this dish is everything in the sauce part of making a traditional lasagna, then in that, you cook pasta and gives the dish a wonderful hearty feel.
It’s a recipe that is different and yet somehow is filled with familiarity. It works and is delicious.
Having a great lentil soup recipe is something to treasure. This dish has coconut cream, curry and peanuts, what more could anyone want in a soup!
Containing a wonderful array of herbs and spices this is a seriously good dish. The secret ingredients for me are quite simple, carrots and onion!
It’s not as though their flavors burst through, but they provide a rock solid foundation for the overall taste. You’re going to love it!
Roasted Potato Soup with Mushrooms (Gluten-Free)
Potatoes and mushrooms, two of my favorite foods. Here they come together in an exceptionally creamy soup.
These two main ingredients are there as chunky gems that are a part of the soup that consists of onion, bell pepper, almond milk and more!
You’re only looking at 10 minute prep time followed by an hour cooking, but don’t let that put you off. During that time, you can get ready for your evening!
When it’s ready you’ll end up with a hearty soup that simply ticks all the boxes.
Roasted Butternut Apple Soup
The color of this soup makes it look like a fruit smoothie! It’s all so vibrant and catches your attention. You’d never know butternut squash could turn out like this.
It all comes together in 50 minutes and do note that the amounts listed make 4 servings. The secret ingredient for me is the 2 gala apples, they bring an unparalleled freshness to die for.
Throw in shallots, ginger and, of course, coconut milk for garnish and you have a poshy looking soup with virtually no effort. Great for a dinner party!
Beetroot Soup with Blood Orange and Coconut
If you’re needing a delicious recipe that is unique but will definitely impress, check this out. Beets and blood orange give this an incredible color!
There are just 6 ingredients in this, not including seasoning. The prep time is just 10 minutes followed by about an hour of cooking. You will need a blender to bring this together but if you don’t have one, I think a food processor will do the job just fine with a slightly different texture to finish.
Either way this is lovely, and for me the coconut cream is the winner lurking secretly in the background.
Romesco Soup with Smashed Chickpeas
This is a hearty and rich soup which makes it a perfect starter or go for a large bowl and make it the main event. The chickpeas (garbanzo beans) make this a satisfying gem and the bell peppers and raw almonds with a hint of garlic finish it up perfectly.
You’ll need some harissa paste, the recipe says this is optional and, strictly speaking, that’s true. But I consider this essential! Try it and you’ll make it again and again!
Loaded Veggie Nacho Soup
Nothing quite like a rich soup with nachos, that’s right, nachos! This creamy bowl of a party takes just over 30 mins from start to finish.
Slightly spicy, which you can obviously adjust according to your taste, and very hearty with delicious black beans.
Add your favorite salsa, nachos, avocado and you have something the entire family will enjoy. Great for movie night!

Like falafel? You’re going to love this! This soup really does taste like our favorite snack!
With all your loveable staples like fried onion, minced garlic and a can of chickpeas, this dish is sure to satisfy.
The tamari croutons are to die for and so easy to make. Don’t forget the option toppings of cilantro, lemon juice and, of course, tahini. Wonderful!
Chickpea Kale and Fire Roasted Tomato Soup
Don’t be fooled, the term ‘fire roasted’ in this recipe’s title isn’t just a fancy term.
You can buy these in a can so do try and source them as they make all the difference. Once you try them you’ll only want tomato-based soups to taste like this.
This is a hearty soup that is extremely flavorful. The secret ingredient for me is the diced fennel.
It compliments all the ingredients and you’ll have guests asking for the recipe from the first taste!
Moroccan Chickpea and Lemon Couscous Soup
Couscous is usually used in a similar way to rice. Here we take it one step further and add it to soup in this Moroccan inspired dish.
Along with a can of chickpeas, garlic and a whole host of wonderful herbs and spices, you are going to love this.
Best of all, there’s just a 5 minute prep time and 20 minutes to cook. Perfectly wholesome for a typical evening when you come home from work and want something quick but healthy and full of flavor!
Jerusalem Artichoke Soup
This dish was inspired after the recipe author took a trip to Israel.
You’ll need the best quality artichokes you can find, preferably Jerusalem Artichokes, do note that in some stores they are referred to as sunchokes.
The coconut milk, garlic and cayenne pepper to taste are just part of this bowl of goodness. You have it ready in 30 minutes or less and will be the star of the show!
Slow Cooker Enchilada Soup
Strictly speaking, you’re going to need a slow cooker for this recipe although with just a little imagination I’m sure you’ll achieve the same results.
The ingredients are easy to source and if your local store stocks Old El Paso, grab the chopped green chiles and some red enchilada sauce!
The list of ingredients seems long but most of them are herbs and spices so it isn’t as big as it seems. Totally bursting with flavor and a family favorite!
Chilled Zucchini and Sage Soup
This may be a cold soup, but it isn’t to be confused with gazpacho, the latter being an essentially raw dish.
This is cooked then allowed to cool before serving. Because of this method, it’s perfect for a dinner party as can be made ahead of time and stored in the refrigerator.
There’s just a handful of ingredients and it’s so easy to make. I think this is your perfect start, I really do.
Often soups can be both a starter and entrée and I’m not taking anything away from this dish by saying you should use it to begin your evening with. It’s just perfect.
Egg Drop Soup Recipe
Yes, this is vegan! It’s core ingredients are jackfruit and tofu. This is a Chinese inspired recipe and the amounts listed serve 2 so do adjust as necessary according to your needs.
For me, there is something warming and satisfying about this, I almost want it to be chilly outside and have this in a bowl or big mug.
It’s light yet, you won’t be hungry afterwards. You’re going to love it!
Roasted Carrot Soup
OK I need you to note something. This recipe has Greek Yogurt listed in the ingredients and it’s used for serving.
Normally we wouldn’t list a dish that isn’t vegan, but we let this one slide as the soup is 100% vegan and tastes incredible!
You should easily find a vegan Greek Yogurt alternative either locally or online I’m sure and if you can’t, you could use a coconut-based yogurt or a vegan cream.
The roasted carrots and yellow onion is at the heart of this soup. Make sure you use the best quality extra-virgin olive oil you can find as it will make all the difference.
Finally, if you want to make it look poshy, get some fresh basil!
Cream of Celery Soup with Olive Oil + Watercress
OK when I first saw this recipe I thought it looked good and, well, that was it. The moment I first tried it, however, it was like, hold the front page.
You must follow this recipe to the letter and do swirl a little extra-virgin olive oil to finish and I stress, extra-virgin and not regular olive oil.
You will need a good blender for this, we’d recommend a Vitamix or Blentec but there are some other good ones out there too.
If you don’t have one, you could use a food processor although you won’t achieve the same texture, which isn’t the end of the world, if that’s all you have.
Good cooking is all about using what you’ve got and that applies to kitchen equipment as well as ingredients.
I love vegetable samosas. Well, I’m a big fan of all vegan Indian cuisine, it’s probably my favorite food! This really intrigued me. Samosa… but a soup? Yes and yes!
Let me start off by assuring you that this totally works. If you are thinking of inviting friends over and they love Indian food, this recipe is what you want.
Easy to make and can be a part of a great Indian meal with all sorts of other goodies! Make it!
Easy Minestrone Soup
I think there are a million minestrone recipes in Italy alone! Italy is divided into regions and every one of them has its own variation of a recipe. There is no one single ragù recipe, for example.
The same goes for minestrone soup. My Mom’s minestrone is made from steamed vegetables that she smashes to make a thick soup.
My Dad, on the other hand, boils a bunch of whatever vegetables need eating, a can of beans, maybe some pasta and that’s it! I’m saying all this because what we have here is a wonderful minestrone recipe, but it’s also extremely flexible, so check the ingredients with this in mind.
For example, carrots are not listed in the ingredients, but you could easily add them in! A solid recipe everyone needs to know about.
Dal Fry – Spiced Indian Lentil Soup
Just say Indian food and I’m first in line! I love Dal (sometimes written as, Dahl) and you can never have enough variations of it.
This takes just 45 minutes to bring to the table and 30 minutes of that is cooking time. Very easy to make with classic Indian ingredients that you will easily be able to source.
Serve with Naan or your favorite Indian bread. The amounts listed in the ingredients serve 3, or in my case, 1!
Garam Masala Carrot Soup
Get your blender motor warmed up and get your taste buds ready. OK so blenders don’t need to be warmed up but for those of you that have read my roundups, you’ll know I love Indian food. So maybe it’s my tummy that is whirring in anticipation?
Just a handful of ingredients and a little prep time will make this wonderful soup. Drizzle some good quality coconut milk or cream to finish and you have a fine-looking dish for yourself or for a dinner party. Delicious!
Shiitake and Spinach Miso Soup
This is almost a clear soup filled with great tasting ingredients. I say ‘almost clear’ because it’s quite dark due to some of the foods making it so, but you get my drift!
This soba noodles and shitake mushrooms take centre stage with everything else being the perfect accompaniment.
Really easy to make, you’ll have this ready to serve within 40 minutes. Totally healthy and very tasty, one of my favorites!
French Onion Soup
A French classic and I think a recipe we all need to know. Just 10 minutes prep and an hour to cook while all the flavors blend and come together beautifully.
I think the best thing about this recipe is the simple ingredients and the ease with which you can make it. It’s also very cheap! Really, it is and you probably have most of the ingredients in your kitchen already.
Laura’s Small Batch Roasted Soup
This is the type of recipe I like, the main ingredients… ‘Seasonal Vegetables’, that’s what I like to see. Not just eat foods that are in season but also use what you have. For me, a very important philosophy for cooking.
Add some staples like onion, garlic and extra-virgin olive oil, to name but a few, and you’re cooking with gas, maybe literally!
Incredibly flavorful and is ready within 30 minutes, and nobody can argue with that!
Mexican Tequila Lime Chickpea Soup (Gluten Free)
Come on now, look at that photo. You have sweet onion, bell peppers, chickpeas and so much more.
The dish does include Tequila (to use as an ingredient, not to drink while you’re making it!) but do make sure it’s vegan as some kinds aren’t.
If you use dried chickpeas be sure to soak overnight and prepare according to instructions on the packet.
This may take an hour and twenty minutes from start to finish but I am literally begging you to not let that put you off. This is seriously tasty, very healthy and I guarantee you’ll love it!
Broccoli Almond Soup
This is a perfect dinner party recipe. Really easy to make and light yet very flavorful. Get the best quality broccoli you can as this will make all the difference.
The secret ingredient for me here is the onion.
Yes, it’s used a lot in cooking but here it’s subtle and makes the perfect partner to the broccoli. If you are entertaining, the almond slivers are a must.
Cream of Mushroom Soup
Cream of mushroom soup is something most of us buy in a can. That’s shame because not only is it easy to make, when you do, it tastes a hundred times better. And let’s face it, tinned food is not what nature ordered!
Get to know this recipe well and you’ll never buy a canned version again, there simply is no comparison.
From start to finish you’re looking at bringing this to the table in 45 minutes or less. Totally delicious!
Lemon, Orzo and Fennel Soup
I doubt that you have had lemon as one of the main ingredients in a soup. Let me assure you that this really works and along with the orzo and the fennel, this is one tasty dish!
Do note that the amounts listed in the ingredients make for 6 to 8 servings, so be sure to adjust according to your needs.
The secret ingredient for me is the finely sliced leek which gives a very mild flavour in the background. Totally wonderful.
Wild Rice Soup in the Instant Pot
If you don’t like the look of the photo for this recipe, I don’t think we can be friends. Please note that this dish is made with a pressure cooker.
However, if you don’t have one I’m sure you can achieve similar results with a little imagination and experience.
The creaminess comes from the cashews and ideally you would have soaked these overnight. If you use dried chickpeas, be sure to also soak these overnight too or simply use a can.
This dish personifies a hearty soup. Great for any time of year particularly wonderful in those cold winter months.
Porra Antequerana (Spanish Cold Tomato Soup)
This is a typical Spanish cold soup, these are also referred to as gazpacho. If you’re into raw foods, this will be ideal because it’s just that. Yes, rye bread is included although is an accompaniment.
Because this soup is raw it’s very important to buy the best quality ingredients that you can, also you’ll want to make this on the day you buy the ingredients to ensure freshness.
It will store in the fridge but only for about an hour, ideally you will make this and eat immediately. It doesn’t get any healthier than this!
Spicy Green Soup
When you’re craving a soup with a bit of bite for the colder days, this is an ideal go-to recipe that’s healthy, tasty and has just the right spice to warm your core.
Go ahead and make this lovely soup; enjoy!
Maple Roasted Parsnip & Celeriac Soup
One of those dishes that has a unique flavor, but everybody seems to like. This goes heavy on the parsnips and with a little maple syrup, the two flavors go well together and in the back-ground you have garlic, rosemary and so much more.
If you can get some vegan ‘parmesan’ and croutons they will be the perfect finish. The recipe also suggests some garlic olive oil and I highly recommend this as well.
I know some of you will look at the title of cabbage soup and will probably pass on it thinking it will be some sort of green stew! I promise that the flavor is nothing that you are expecting!
Just a handful of ingredients that include onion, crushed tomatoes and more.
A dash of Tabasco sauce is listed so add according to your taste or leave out altogether. A delicious soup that is better than you think!
Yellow Squash Soup
In just 30 minutes or less you will bring this delicious soup to the table. You need a couple of pounds of yellow Squash thinly sliced. Other than that, there are just a handful of ingredients.
A blender is needed to achieve this smooth consistency, if you don’t have one use a food processor. The flavor will be the same although you may have a different texture which is okay.
If you are unable to source vegan ‘parmesan’ you can whizz up pine nuts and nutritional yeast in the food processor, you just need three or four pulses. Incredibly tasty and easy to make.
Golden Bell Pepper Soup
What a wonderful soup this is, just beautiful ingredients such as carrots, yellow onion and bell peppers. You will have no problems finding all of the ingredients, this is good honest food.
The recipe page is really good because it has plenty of photos and will take you through everything step by step.
You will need a blender to achieve a creamy consistency although if you don’t have one, you can use a food processor.
If you don’t have that either, just eat as it is and it’ll be great.
I urge you not to skip the avocado. It might look like it’s just for decoration, but for me, it’s an essential part of the dish. Delicious!
I hope this roundup has changed your perception about soup. Long gone are the days where vegans think of soup as just vegetable soup.
It’s so much more and by default is healthy and satisfying.
As you’ve seen, one of the great things about soups, is the recipes are usually very versatile; if you don’t have a particular ingredient, you can easily swap it with what you do have.
For me, this is what fantastic recipes are all about. I think all cooking should be about using what you have.
