Granola, it’s a wonderful thing! You know, I don’t think I’ve ever seen a store-bought packet that contains bad ingredients.
The real problem with pre-packaged granola, at least in my experience, is the price. It can be just ridiculously expensive.
Then I start to wonder how long ago it was made, was it days, weeks or months? I don’t mean to be doing a disservice to granola, I guess I’m just saying unless you make something yourself, you never know. So, how difficult is it to make your own?
If you don’t have all the ingredients already in your kitchen, I imagine you have most of them.
Make this yourself in the oven and it stores in a tight container at room temperature for up to 2 months. It tastes amazing and is incredibly economical, and so much cheaper than anything I have ever seen in a store.

This can be ready in 30 minutes or less and that includes prep and cooking time. This recipe has dried peaches though you could use any dried fruit.

With this recipe you’re making the sauce/glaze from scratch. It’s the first time I’ve ever seen such a recipe and I don’t know if they’re all like this, but simple and fast is the best description I can offer!
Please note, the ‘meat’ substitute in this recipe is a packet of something called ‘soy curls’ and it is a brand name I had not seen before.
If you’re unable to source this, either use your favorite meat substitute or simply use tofu. The teriyaki sauce is spot-on!

The ‘meat’ in this dish simply comes from a bag of frozen soya mince. Of course, you can use tofu or substitute for your favorite meat-free you usually buy and as a last resort, you could easily leave it out altogether.

Easy Asian Slaw with Ginger Dressing

What I particularly love about this recipe is the ingredients are familiar, you really won’t have any problems sourcing anything, yet they are combined with an Asian twist.
The grated ginger and the sesame oil simply make this dish amazing and take it to a new level.
Of course, if you’re not a fan of ginger simply leave it out, there are lots of other flavors and the sauce/dressing will be just fine if you leave it out.
The salad itself has two main ingredients, green cabbage and red onion. Great texture, super healthy and a sauce you will use again and again.

Okay, so I saw the title of this recipe and thought I was going to see a long list of ingredients that were going to be good but, you know, no matter how you spin it, there’s nothing quick and easy about making a home-made chili. How wrong was I!
On seeing the recipe photo I assumed that along with the beans there was some kind of processed meat-free mince.
There isn’t. The base of this dish is kidney beans, eggplant, bell peppers, celery and onion.
Add the other herbs and spices and in total you’re looking at a 5 minute prep time and then while it’s cooking (30 minutes), you can decide which movie you’re going to watch!
Serve with rice, quinoa or with your favorite crusty bread. Perfect!

You don’t have to say vegan dumplings twice to me, let me tell you! As this recipe uses white rice and tapioca flour to make the wrappers, it makes this dish gluten-free. It’s oil-free too by the way!

Doesn’t the color of this soup look just incredible? So vibrant and enticing.
The spices in this dish make for a perfect warming soup around the Fall.
You have curry, coconut and a pinch of nutmeg.
Please note that the ingredients do include red chili pepper flakes so add this (or leave out) according to your preference. Comforting and satisfying.

Thai cuisine has some of the best soups I have ever tasted. Normally carrot soup is for carrot lovers, I mean, there’s not much to it other than carrots! This recipe has a lot to it and I don’t mean that it’s complicated, you can bring this to the table in about 40 minutes.
The coconut is what makes everything simply perfect as it blends all the ingredients together.
The ingredients list fresh lime juice and label it as optional, I would recommend that you add this for sure.
You’ll need a blender to make this smooth although you could achieve very similar results with a food processor. Wonderful.
