I could eat sweetcorn by the truckload, it’s something I have never got tired of, I just love it! One of my favorite soups is like a corn and potato chowder so when I saw this I was excited!

This is a very thick and hearty dish. Makes for a great starter or have a big bowl, as I did, and knock yourself out. Incredibly flavorful and I guarantee that you will be making it again.
Chilled Cream of Basil Soup with Corn
You get two recipes in one here with a delicious cucumber salad which alone is a wonderful dish. The soup itself is very rustic with some simple ingredients, a sign of a fantastic dish.
You will need 2 cups of raw cashews soaked overnight before you attempt this so please take note. Other than that, you are literally looking at four or five other ingredients (one of them is optional).
Ideally you going to need a blender to make this, if you don’t have one a food processor will be just fine. Make this, you won’t be sorry!

Please note, you will need a high-speed blender to make this. If you don’t have one, you could use a food processor, but I don’t think you will get quite the same results, but it will work for sure.

I think it would be an idea to write the ingredients down before you go to the store as there are a couple things I have never heard of such as hing and asafetida.
If you have a local Asian store, if they don’t stock it I am sure they will be able to get it for you. Serve with naan or your favorite Indian bread. It’s incredible!
Garlic Soup + Rosemary Polenta Croutons
You’re looking at a seriously good recipe and if you need to impress someone, look no further. Be warned, this is garlic city so make sure everybody has some to avoid offence!
It may seem simple, and perhaps even trivial, but for me the potato is the king of this recipe. It brings everything together as well as providing the perfect consistency.
Do take a look because in addition to the garlic soup, you also get to make polenta croutons which are amazing not just for this soup, but great for salads too!

This is essentially a raw soup and there’s nothing like food, as nature intended. The recipe is split in two: the soup itself which has just four ingredients, and then the topping.
The latter is a delicious cream with a base of cashews. The instructions suggest soaking the cashews for 10 minutes in hot water. If you have time and you remember, soak them overnight as I think you will get a better consistency.
You don’t have to use the topping although if you can, do so. The vibrant colours with the two shades of green is stunning.

The flavors are rich yet not overpowering. You can use any color or bell peppers, or even a mixture of different types.
We just used red as somehow that seemed to fit with the smoky flavor of the dish. Absolutely delicious and great for leftovers!

I love how flexible this recipe is, it has mushrooms, carrots and celery but if you don’t have one or two of these, it’s okay to leave them out.
If you have other vegetables instead, such as zucchini or bell peppers, you can easily use them instead. The essence is just to use what you’ve got.
The chickpeas and the noodles are the stars of the show and will leave you feeling satisfied and trying to find an excuse to make this tomorrow as well, and the next day!
Bok Choy Miso Noodle Soup
Stop messing about and just make this recipe, I mean, what are you waiting for? With the portobello mushrooms, chickpea miso paste, tamari and so much more, you’re in for a treat.
Use your favorite Asian noodles or even just regular pasta.

There are just 6 ingredients in this, not including seasoning. The prep time is just 10 minutes followed by about an hour of cooking. You will need a blender to bring this together but if you don’t have one, I think a food processor will do the job just fine with a slightly different texture to finish.
Either way this is lovely, and for me the coconut cream is the winner lurking secretly in the background.
Romesco Soup with Smashed Chickpeas
This is a hearty and rich soup which makes it a perfect starter or go for a large bowl and make it the main event. The chickpeas (garbanzo beans) make this a satisfying gem and the bell peppers and raw almonds with a hint of garlic finish it up perfectly.
You’ll need some harissa paste, the recipe says this is optional and, strictly speaking, that’s true. But I consider this essential! Try it and you’ll make it again and again!

Slightly spicy, which you can obviously adjust according to your taste, and very hearty with delicious black beans.

The ingredients are easy to source and if your local store stocks Old El Paso, grab the chopped green chiles and some red enchilada sauce!
The list of ingredients seems long but most of them are herbs and spices so it isn’t as big as it seems. Totally bursting with flavor and a family favorite!

This may be a cold soup, but it isn’t to be confused with gazpacho, the latter being an essentially raw dish.
This is cooked then allowed to cool before serving. Because of this method, it’s perfect for a dinner party as can be made ahead of time and stored in the refrigerator.

OK I need you to note something. This recipe has Greek Yogurt listed in the ingredients and it’s used for serving.
Normally we wouldn’t list a dish that isn’t vegan, but we let this one slide as the soup is 100% vegan and tastes incredible!
You should easily find a vegan Greek Yogurt alternative either locally or online I’m sure and if you can’t, you could use a coconut-based yogurt or a vegan cream.
The roasted carrots and yellow onion is at the heart of this soup. Make sure you use the best quality extra-virgin olive oil you can find as it will make all the difference.
Finally, if you want to make it look poshy, get some fresh basil!
Cream of Celery Soup with Olive Oil + Watercress
OK when I first saw this recipe I thought it looked good and, well, that was it. The moment I first tried it, however, it was like, hold the front page.
You must follow this recipe to the letter and do swirl a little extra-virgin olive oil to finish and I stress, extra-virgin and not regular olive oil.
You will need a good blender for this, we’d recommend a Vitamix or Blentec but there are some other good ones out there too.
If you don’t have one, you could use a food processor although you won’t achieve the same texture, which isn’t the end of the world, if that’s all you have.
Good cooking is all about using what you’ve got and that applies to kitchen equipment as well as ingredients.

I love vegetable samosas. Well, I’m a big fan of all vegan Indian cuisine, it’s probably my favorite food! This really intrigued me. Samosa… but a soup? Yes and yes!
Let me start off by assuring you that this totally works. If you are thinking of inviting friends over and they love Indian food, this recipe is what you want.

I think there are a million minestrone recipes in Italy alone! Italy is divided into regions and every one of them has its own variation of a recipe. There is no one single ragù recipe, for example.
The same goes for minestrone soup. My Mom’s minestrone is made from steamed vegetables that she smashes to make a thick soup.
My Dad, on the other hand, boils a bunch of whatever vegetables need eating, a can of beans, maybe some pasta and that’s it! I’m saying all this because what we have here is a wonderful minestrone recipe, but it’s also extremely flexible, so check the ingredients with this in mind.

Dal Fry – Spiced Indian Lentil Soup
Just say Indian food and I’m first in line! I love Dal (sometimes written as, Dahl) and you can never have enough variations of it.
This takes just 45 minutes to bring to the table and 30 minutes of that is cooking time. Very easy to make with classic Indian ingredients that you will easily be able to source.
Serve with Naan or your favorite Indian bread. The amounts listed in the ingredients serve 3, or in my case, 1!
Garam Masala Carrot Soup
Get your blender motor warmed up and get your taste buds ready. OK so blenders don’t need to be warmed up but for those of you that have read my roundups, you’ll know I love Indian food. So maybe it’s my tummy that is whirring in anticipation?
Just a handful of ingredients and a little prep time will make this wonderful soup. Drizzle some good quality coconut milk or cream to finish and you have a fine-looking dish for yourself or for a dinner party. Delicious!
Shiitake and Spinach Miso Soup
This is almost a clear soup filled with great tasting ingredients. I say ‘almost clear’ because it’s quite dark due to some of the foods making it so, but you get my drift!
This soba noodles and shitake mushrooms take centre stage with everything else being the perfect accompaniment.
Really easy to make, you’ll have this ready to serve within 40 minutes. Totally healthy and very tasty, one of my favorites!
French Onion Soup
A French classic and I think a recipe we all need to know. Just 10 minutes prep and an hour to cook while all the flavors blend and come together beautifully.
I think the best thing about this recipe is the simple ingredients and the ease with which you can make it. It’s also very cheap! Really, it is and you probably have most of the ingredients in your kitchen already.

This is the type of recipe I like, the main ingredients… ‘Seasonal Vegetables’, that’s what I like to see. Not just eat foods that are in season but also use what you have. For me, a very important philosophy for cooking.
Add some staples like onion, garlic and extra-virgin olive oil, to name but a few, and you’re cooking with gas, maybe literally!
Incredibly flavorful and is ready within 30 minutes, and nobody can argue with that!
Mexican Tequila Lime Chickpea Soup (Gluten Free)

The dish does include Tequila (to use as an ingredient, not to drink while you’re making it!) but do make sure it’s vegan as some kinds aren’t.
If you use dried chickpeas be sure to soak overnight and prepare according to instructions on the packet.
This may take an hour and twenty minutes from start to finish but I am literally begging you to not let that put you off. This is seriously tasty, very healthy and I guarantee you’ll love it!
Broccoli Almond Soup
This is a perfect dinner party recipe. Really easy to make and light yet very flavorful. Get the best quality broccoli you can as this will make all the difference.
The secret ingredient for me here is the onion.
Yes, it’s used a lot in cooking but here it’s subtle and makes the perfect partner to the broccoli. If you are entertaining, the almond slivers are a must.
Cream of Mushroom Soup
Cream of mushroom soup is something most of us buy in a can. That’s shame because not only is it easy to make, when you do, it tastes a hundred times better. And let’s face it, tinned food is not what nature ordered!

The secret ingredient for me is the finely sliced leek which gives a very mild flavour in the background. Totally wonderful.

If you don’t like the look of the photo for this recipe, I don’t think we can be friends. Please note that this dish is made with a pressure cooker.
However, if you don’t have one I’m sure you can achieve similar results with a little imagination and experience.
The creaminess comes from the cashews and ideally you would have soaked these overnight. If you use dried chickpeas, be sure to also soak these overnight too or simply use a can.
This dish personifies a hearty soup. Great for any time of year particularly wonderful in those cold winter months.
Porra Antequerana (Spanish Cold Tomato Soup)
This is a typical Spanish cold soup, these are also referred to as gazpacho. If you’re into raw foods, this will be ideal because it’s just that. Yes, rye bread is included although is an accompaniment.
Because this soup is raw it’s very important to buy the best quality ingredients that you can, also you’ll want to make this on the day you buy the ingredients to ensure freshness.
It will store in the fridge but only for about an hour, ideally you will make this and eat immediately. It doesn’t get any healthier than this!
Spicy Green Soup
When you’re craving a soup with a bit of bite for the colder days, this is an ideal go-to recipe that’s healthy, tasty and has just the right spice to warm your core.
Go ahead and make this lovely soup; enjoy!
Maple Roasted Parsnip & Celeriac Soup
One of those dishes that has a unique flavor, but everybody seems to like. This goes heavy on the parsnips and with a little maple syrup, the two flavors go well together and in the back-ground you have garlic, rosemary and so much more.
If you can get some vegan ‘parmesan’ and croutons they will be the perfect finish. The recipe also suggests some garlic olive oil and I highly recommend this as well.

I know some of you will look at the title of cabbage soup and will probably pass on it thinking it will be some sort of green stew! I promise that the flavor is nothing that you are expecting!

Yellow Squash Soup
In just 30 minutes or less you will bring this delicious soup to the table. You need a couple of pounds of yellow Squash thinly sliced. Other than that, there are just a handful of ingredients.
A blender is needed to achieve this smooth consistency, if you don’t have one use a food processor. The flavor will be the same although you may have a different texture which is okay.
If you are unable to source vegan ‘parmesan’ you can whizz up pine nuts and nutritional yeast in the food processor, you just need three or four pulses. Incredibly tasty and easy to make.
Golden Bell Pepper Soup
What a wonderful soup this is, just beautiful ingredients such as carrots, yellow onion and bell peppers. You will have no problems finding all of the ingredients, this is good honest food.
The recipe page is really good because it has plenty of photos and will take you through everything step by step.
You will need a blender to achieve a creamy consistency although if you don’t have one, you can use a food processor.
If you don’t have that either, just eat as it is and it’ll be great.
I urge you not to skip the avocado. It might look like it’s just for decoration, but for me, it’s an essential part of the dish. Delicious!
