Stunning Kale Recipes
Kale Chocolate Cheesecake
Kale in a cheesecake? Trust me on this!
Don’t worry, this fantastic desert is full of sweetness from ingredients such as medjool dates, cinnamon and more.
The ingredients are divided into three sections, the crust, the cheesecake layer where kale makes the color, and finally the toppings. Delicious and super healthy!
Potato Tacos with Massaged Kale
When it comes to taco night, this recipe is not what you may expect but it certainly hits the spot.
Seasoned potatoes with some great partners such as olives, tomatoes and kale make this a hearty and gluten-free feast.
BBQ Chickpea Tacos with Kale Cabbage Slaw
I absolutely love these tacos. I must admit when it comes to things like this, soft tacos are my favorite.
The fillings hit the spot with the perfect combination of hearty goodness such as chickpeas, and the cabbage slaw.
They work perfectly together making one thing for sure, however many you prepare, it won’t be enough!
Sweet Potatoes, Crispy Chickpeas and Kale
Just take one look at that!
The chickpeas (garbanzo beans) are prepared to perfection. They end up with an incredible texture and flavor thanks to the paprika, garlic powder and more!
The kale adds a delicious contrast which makes this the perfect meal.

Crispy Kale Pizza
Do trust me on this one! The kale absolutely is the star of the show.
It’s prepared to perfection and makes the perfect addition to this pizza along with other favorites such as mushrooms, kalamata olives and more.
You can make the pizza dough from scratch as suggested, or you could save yourself some time and use a store-bought version.
You also get to learn how to make vegan cashew ricotta! Put everything together and bam!

Super Creamy Cauliflower Kale Soup
If you’ve never had cauliflower soup before, this really should be your first. Although I must say there’s a danger of you never trying another recipe again!

Yet looking down the list of ingredients, you’ll see how good for you this is.
Garlic Kale Hummus Dip
I love traditional hummus, but I also love to try other variations.
This recipe ensures you don’t miss out on the satisfaction hummus always delivers. Garlic, kale and more make this great looking and tasting dip.
Makes a great salad dressing too!
Dangerously Cheesy Kale Chips
There’s no way we were going to make a collection of recipes like this without including kale chips!
So here’s the thing, store-bought packets of kale chips tend to have great ingredients every time.
The problem is they can also be hideously expensive, especially if you’re addicted to them like I am!
Here you get to make what I honestly think is the best recipe I have ever seen.
Easy Cheesy Kale Chips
What puts a lot of people off about making their own kale chips is that most of us don’t have a dehydrator. So, what do you do?
Make your own simply using your oven! Along with the kale you need just four other ingredients. The instructions are extremely simple and easy to follow.
You’re looking at just 15 minutes prep time and 50 minutes in the oven. This is a big advantage of having a dehydrator that would take hours and hours.
I love falafel and even though the traditional recipe is simple, it is often fried and can be a little dry.
This dish takes care of both of those issues. Firstly, it is baked and secondly the kale, along with all the other wholesome ingredients, make this beautifully moist.
Serve as you would with a regular falafel or shape into burger patties and have a blast!
Brussel Sprouts Kale Salad with Sunflower Seeds
If you want super healthy, look no further.
Make no mistake, this isn’t just about greens and nothing else. The dressing is made with vegan mayonnaise, Dijon mustard and just two other ingredients.
Not only is it delicious and I know you’ll be using it regularly, but it brings together everything in the salad beautifully.
Polenta Lasagna with Portabellas and Kale
Polenta is often used in Italian cooking. It is made from corn and has a very benign taste which lends itself perfectly to so many dishes.
You could also call this a sandwich that you eat with utensils! The filling is made from a hearty combination of mushrooms, kale and other wholesome ingredients.
The sauce is the star of the show bringing all the flavors together beautifully.
Kale Caesar Salad with Crispy Smoked Chickpeas
This makes for a great appetiser and an even better lunch!
The chickpeas (garbanzo beans) are prepared perfectly.
It’s very easy to make them go hard but follow the simple instructions and you’ll have chickpeas with a smoky flavor!
If this wasn’t enough, the vegan Caesar salad dressing comes along and steals the show!
Arugula and Kale Green Juice
Time to get your juicer out! If you don’t have one, I certainly recommend investing soon!
The only advice I’d give is to get a slow, masticating juicer as this will always yield more juice from your fruits and vegetables compared to a fast, centrifugal machine.
A simple and ultra-healthy green drink. You get the goodness from the kale and arugula, alkalizing volume from celery and fantastic flavors from two other ingredients.
Follow the simple instructions and you’ll have yourself a drink that is good for you and delicious. The perfect start to the day!
Tempeh and Kale Enchilada Casserole
One thing you may not have expected from a kale recipe, is a hearty and satisfying meal!
Here we have everything you could have wished for. The recipe has a Mexican twist and is full of protein from beans and tempeh.
Wholesome ingredients and a creamy sauce to die for!
Kale Spinach Smoothie
If you’ve never had a green drink before, this would be a great place to start. I know some people don’t care for green drinks too much and I get it. I used to be the same.
The secret to a great, healthy green drink is getting the right balance with sweetness. There are some hard-core green drinkers out there that don’t need anything sweet in their smoothie, I’m not one of them!
This recipe uses apple, banana and mixed berries to give you the perfect balance.
Kale Avo-Berry Smoothie
Not everyone has a juicer but most of us have a blender, this is where this recipe kicks in!
Grab your favorite plant-based milk, a cup of frozen blueberries and just a handful of ingredients. Blend everything together in a high-speed blender and enjoy!
One Pot Curried Spaghetti with Kale
This is where India meets Italy! Two of the world’s most delicious cuisines come together in this delicious and hearty recipe.
Other than the dish itself, the best part about this is how it’s made in just one pot!
The cleaning up afterwards is always on my mind and this keeps it to a minimum.
Incredible flavors including coconut and crunchy kale make this dish a hit.
Butternut Squash Mac and Cheese with Kale
This is the one you’ve been waiting for! Well, I have been anyway!
The sauce is made from nutritional yeast, coconut and more. It certainly delivers its cheesy obligation and at the same time is silky smooth.
You’re going to love it!
Kale Caesar Salad with Crispy Chickpea Croutons
The only word to describe this salad is delicious.
Alyssa, the recipe author, has done an amazing job on this. The recipe is simple with great step-by-step instructions.

Tuscan Kale Soup
There are many variations of soup, even within Tuscany. Like the rest of Italy, each town within each region has its own interpretation on traditional recipes. You only have to travel a few miles to have something different. I love it!
Here we have a hearty soup full of different flavors and textures. It’s the type of dish that you will eat twice as much than you anticipated.
Perfect for those colder months but really, it’s great at any time of the year.
Creamy Kale Gratin
This is the type of dish you pull out when you are wanting to impress someone. It looks like you spent hours in the kitchen, yet this comes together in about 45 minutes.
Dijon mustard and a sauce based on raw cashews make this an incredible side-dish.
To be honest, I think it’s best served alone with your favorite crusty bread!
Creamy Kale Salad with Maple Tahini Dressing
A super healthy salad so versatile it will be the perfect accompaniment to any meal.
The tahini dressing includes a little maple syrup for that perfect balance of sweetness.
Add the sprouts, almonds and all the other ingredients together and you have a beautiful looking dish.
Everyday Kale Salad
Sometimes you need a recipe so simple that you can throw together in just minutes with ingredients you already have in the kitchen.
Looking down the handful of ingredients you already know this is going to be the delicious.
Eat it on its own, as part of a wrap or however you choose. One things for sure, you’ll be making it again and again!
Lemony Kale Chickpea Avocado Salad
If you like zesty flavors, this salad was made for you!
Hearty avocados make this a salad far too good to be sitting on the side lines. Incredibly easy to make with everyday ingredients.
It’s also versatile so feel free to add whatever you fancy and make this your own!
Creamy Orzo with Caramelized Onions and Kale
Well, I don’t know what to say about this dish because it’s simply too delicious!
Seriously, forget take-out as everything you like about that is right here. The difference being this recipe is full of ingredients you recognize and are good for you.
It’s also infinitely less expensive to make. Your whole family will love it and your kids will yum it up!
Kale, Mushroom and Roasted Chickpea Rice Bowls
Whether it’s for Meatless Mondays or any other day of the week, this filling dish will always serve you well.
If you’re like me, you love rice-based dishes. This is packed with moreish ingredients such as chickpeas, mushrooms to name but a few. Make it, love it, eat it!
Kale and Quinoa Stuffed Peppers
You’d think a recipe for stuffed peppers is complicated. So many ingredients and then you worry whether they will go with the distinctive flavor of bell peppers. This recipe takes care of everything.
Quinoa, carrots, walnuts and onion are some of ingredients that make this a first-class meal. You’re only looking at 15 minutes prep time and then 45 minutes in the oven.
This gives you enough time to get ready and decide what movie you’re going to watch! The amounts listed in the ingredients yield 3 to 6 servings so adjust accordingly.
We hope this collection of recipes waives the kale flag!
As you can see, there are so many ways to include it in our meals. It’s incredibly healthy and we should eat as much of it as possible.
If you’re lucky enough to have a garden, why not grow your own? We all know eating fresh food is good for us, food that you have grown yourself is even better!
While you’re deciding which dish to make, grab some kale chips. If you’ve never made them before, there are a couple of recipes included!
