Korma is one of my favorites and for many people that don’t like spicy food, it’s the mildest curry there is.
I have seen chickpeas and cauliflower together in Indian cuisine many times, the addition of using parsnip gives this a beautiful twist.
Incredibly easy to make and the flavor is just beautiful. Serve over basmati rice and eat with a spoon to get more in!

This recipe is ideal if you have a bunch of herbs that need using. I like that Amanda, the recipe author, suggests using dried chickpeas rather than those in a can.
Although I would not hesitate to use the canned variety, dried chickpeas are more flavorful and have better texture. You just need to prepare them the day before, make sure you follow the instructions on the packet carefully.
This snack just takes five minutes prep time and a little over half-an-hour to cook. Allow to cool slightly and then eat quickly!
